- 2 tbsp. olive oil
- 1 green pepper/capsicum cubed
- 1 red pepper/capsicum cubed
- 200 gms firm tofu cubed
- 3 tbsp. vegan massaman curry paste
- ½ cup Coconut milk
- 11/2 cup water adjust as per your liking.

Heat oil in a pot. Add chopped peppers with little salt. Let it soften.
Add the tofu pieces. Let it cook for a few minutes.
Add 2-3 tbsp. vegan massaman curry paste to it.
Let it cook for a few minutes.
Add coconut milk and let it come to a boil and water. S Simmer for 4-5 minutes. Serve hot with jasmine rice or vegan naan.
