Equipment

  • Pot / Le cruset pot / frying pan / stock pot

Ingredients

  • 2 tbsp. olive oil
  • 1 green pepper/capsicum cubed
  • 1 red pepper/capsicum cubed
  • 200 gms firm tofu cubed
  • 3 tbsp. vegan massaman curry paste
  • ½ cup Coconut milk
  • 11/2 cup water adjust as per your liking.
  • salt as per taste.

Instructions

  • Heat oil in a pot. Add chopped peppers with little salt. Let it soften.
  • Add the tofu pieces. Let it cook for a few minutes.
  • Add 2-3 tbsp. vegan massaman curry paste to it.
  • Let it cook for a few minutes.
  • Add coconut milk and let it come to a boil and water. S
  • Simmer for 4-5 minutes. Serve hot with jasmine rice or vegan naan.
