Ingredients

Vegetable patties filing

  • 2 tbsp. oil
  • 1 medium onion
  • 2 stalks green onion optional
  • 1 small carrot chopped,can also add some beetroot.
  • 2-3 medium potatoes boiled
  • ½ cup peas frozen/fresh
  • ½ tablespoon curry powder
  • 1 teaspoon paprika powder
  • salt as per taste

For slurry/coating

  • ½ cup water
  • cup oats powder or all purpose flour/ maida
  • ¼ cup tapioca starch or corn flour
  • 1 cup breadcrumbs

Instructions

How to make cutlet stuffing?

  • Heat oil in a skillet and add chopped onions, ginger and green onions to it.
  • Add chopped carrots to it along with salt.
  • Add curry powder to the skillet and mix well.
  • Now, add boiled potatoes to the skillet and mix well.
  • Now, add the frozen peas and mix well.
  • Mash the mixture coarsely to make a stuffing. Keep it aside to cool completely.

How to make air fryer railway cutlets in air fryer ?

  • Make a heart shaped patty of the above filling. You may choose any other shape as per your choice using a different cookie cutter.
  • In a bowl, mix oats powder, water and tapioca starch or corn flour to make a slurry. It should be of thick pouring consistency. Dip each patty in the slurry.
  • Transfer it to a plate with breadcrumbs. Cover the patty nicely with bread crumbs.
  • Transfer all the patties to a plate and brush them with oil. If you want to freeze it, you can freeze them at this stage by covering them with a baking sheet or cling wrap and use it later. (better results with brushing the patties instead of using oil spray)
  • Preheat the air fryer for 5 mins at 190 C| 375 F. Place the railway cutlets in the air fryer basket without overlap.
  • Air fry cutlets at 190 C| 375 F for 10 minutes.
  • Brush oil again, flip over and cook for further 5-7 minutes or until golden brown.
    Cook until they are golden brown and evenly cooked on both sides.
  • Serve hot with mint chutney / date or tamarind chutney or tomato ketchup

To cook them in the oven, it will take close to 23-25 minutes at 180C (pre heated oven).
