    Vegetable cutlet is an all time favorite snack. With very simple ingredients you can make this tasty dish at home and with the use of air fryer, it requires even lesser oil than the traditional recipe of the mix vegetable cutlet.

    Railway cutlet or Indian cutlet is a perfect memory of any traveler who had a wanderlust. After all, Indian railways are one of the largest in the world and millions of people travel in it daily. Make these perfect veg cutlets anytime, you want to go down your memory lane.

    Ingredients

    For filling

    • oil
    • potatoes
    • carrots and beetroot(optional)
    • onions
    • peas
    • curry powder
    • ginger
    • coriander powder
    • cumin powder
    • salt and paprika as per taste

    For coating

    • oats powder / all purpose flour
    • water
    • corn flour / tapioca starch
    • bread crumbs

    Instructions for vegan cutlet filling.

    1. Heat oil in a skillet and add chopped onions, ginger and green onions to it.

    2. Add chopped carrots to it along with salt.

    3. Add curry powder to the skillet and mix well.

    4. Now, add boiled potatoes to the skillet and mix well.

    5. Now, add the frozen peas and mix well.

    6. Mash the mixture coarsely to make a stuffing. Keep it aside to cool completely.

    • 1. Make a heart or circle shaped patty of the above filling.

    Instructions for potato cutlet recipe

    • Make a heart shaped patty of the above filling. You may choose any other shape as per your choice using a different cookie cutter.

    • In a bowl, mix oats powder, water and tapioca starch or corn flour to make a slurry. It should be of thick pouring consistency. Dip each patty in the slurry.

    • Transfer it to a plate with breadcrumbs.

    • Cover the patty nicely with breadcrumbs.

    • Transfer all the patties to a plate and brush them with oil.(better results with brushing the patties instead of using oil spray)

    • Preheat the air fryer for 10 mins at 190 C| 375 F. Add the railway cutlets to the air fryer basket without overlap.

    • Air fry cutlets at 190 C| 375 F for 10 minutes.

    • Brush oil again, flip over and cook for further 5-7 minutes or until golden brown.
    • Cook until they are golden brown and evenly cooked on both sides.

    • Serve hot with tomato ketchup or green chutney

    Variation

    You can add chopped frozen beans and corn too the filling. If you like a distinct red colour add steamed beets to the mixture while it is cooking. Once you know how to prepare cutlet with potato, you can mix veggies of your choice and herbs too for a different patty. Buckwheat patties, rajma cutlets are a great if you want to go gluten-free.You can also make a non-vegetarian patty like keema patties or chicken nuggets.

    Substitution

    You can also use sweet potatoes instead of potatoes, the mix will be sweeter. Cooking time may vary slightly.

    Storage

    Make the patties and store it in a freezer covering with a cling film or baking sheet. They can be made anytime you want to eat later.

    Vegetable patties filing

    • 2 tbsp. oil
    • 1 medium onion
    • 2 stalks green onion optional
    • 1 small carrot chopped,can also add some beetroot.
    • 2-3 medium potatoes boiled
    • ½ cup peas frozen/fresh
    • ½ tablespoon curry powder
    • 1 teaspoon paprika powder
    • salt as per taste

    For slurry/coating

    • ½ cup water
    • ⅓ cup oats powder or all purpose flour/ maida
    • ¼ cup tapioca starch or corn flour
    • 1 cup breadcrumbs

      Cook until they are golden brown and evenly cooked on both sides.
    • Serve hot with tomato ketchup.

    Notes

    To cook them in the oven, it will take close to 23-25 minutes at 180C (pre heated oven).

    • Cook to a minimum temperature of 165 °F (74 °C).
    • Don't leave food sitting out at room temperature for extended periods.
    • Never leave cooking food unattended.
    • Use oils with high smoking point to avoid harmful compounds.
    • Always have good ventilation while cooking.
