Vegetable cutlet is an all time favorite evening snack. With very simple ingredients you can make this tasty dish at home and with the use of air fryer, it requires even lesser oil than the traditional recipe of the mix vegetable cutlet.

Ingredients
For filling
- Oil - Use an oil with high smoking point such as avocado oil,macadamia oil
- Potatoes - Boil the potatoes before using them
- Onions,peas,carrots and beetroot(optional) - You can add veggies as per your choice
- Ginger
- Curry powder - Use as per your liking
- Coriander powder - Use as per your liking
- Cumin powder - Use as per your liking
- Salt and paprika as per taste
For coating
- Oats powder / all purpose flour - Use a flour mix for coating
- water
- corn flour / tapioca starch - This helps the the coating to get firm
- panko breadcrumbs / finely chopped slices of bread - For a crunchier coating

Instructions for vegan cutlet filling.
- Heat oil in a skillet and add chopped onions, ginger and green onions to it.
2. Add chopped carrots to it along with salt.
3. Add curry powder to the skillet and mix well.
4. Now, add boiled potatoes to the skillet and mix well.
5. Now, add the frozen peas/ fresh green peas and mix well.
6. Mash the mixture coarsely to make a stuffing. Keep it aside to cool completely.
- 1. Make a heart or circle shaped patty of the above filling.
Instructions for potato cutlet recipe
- Make a heart shaped patty of the above filling. You may choose any other shape as per your choice using a different cookie cutter.
- In a bowl, mix oats powder, water and tapioca starch or corn flour to make a slurry. It should be of thick pouring consistency. Dip each patty in the slurry.
- Transfer it to a plate with breadcrumbs. Cover the patty nicely with panko bread crumbs.
- Transfer all the patties to a plate and brush them with oil.(better results with brushing the patties instead of using oil spray)
- Preheat the air fryer for 10 mins at 190 C| 375 F. Add the railway cutlets to the air fryer basket without overlap.
- Air fry cutlets at 190 C| 375 F for 10 minutes.
- Brush oil again, flip over and cook for further 5-7 minutes or until golden brown.
- Cook until they are golden brown and evenly cooked on both sides.
- Serve your potato cutlets hot with tomato ketchup or green chutney
Variation
You can add chopped frozen beans and corn too the filling. If you like a distinct red color add steamed beets to the mixture while it is cooking. Once you know how to prepare cutlet with potato, you can mix veggies of your choice.
Vegetarians can also add Indian cottage cheese or paneer to make an aloo paneer tikki. This will make it richer in protein and also give it a great rich taste. Add fresh herbs like coriander leaves, mint leaves for flavor. You can add a teaspoon of various spices to it like chaat masala powder, ginger garlic paste, black pepper powder/ red chili powder, turmeric powder to the cutlet mixture to make it more flavorful. You can also add some chopped cashews to the mixture if you like nuts.
Buckwheat patties, rajma cutlets are a great if you want to go gluten-free. You can also make a non-vegetarian patty like keema patties/ chicken cutlet or chicken nuggets.
Substitution
- You can also use sweet potatoes instead of potatoes, in the vegetable cutlet recipe. It will be sweeter. Cooking time may vary slightly.
- You can add a variety of vegetables to the vegetable mixture like French beans, bell peppers.
- Use chopped green chillies if you like it spicy.
- If you do not own an air fryer, you can even bake them in a traditional oven. You may even shallow fry it in a skillet.
Storage
Make the patties and store it in a freezer covering with a cling film or baking sheet. They can be made anytime you want to eat later.
