Energy bar is an instant pick-me-up.It is a brittle or chikki which is full of vitamin E.Gluten-free and vegan too.Five seed energy bar as the name suggests,is made up of 5 seeds.We make many types of chikki especially on Diwali and Makar Sankranti.
Both these festivals fall in winter.These seeds keep the body warm internally and helps us to avoid falling sick.This is a great nibble during the winters and even long travel journeys.
You can make various types of brittle.Oats and berries,coconut and with tree nuts too.
Seeds like linseed,flax,pepitas,sesame and pumpkin come with their own benefits.
You can make it with jaggery or with raw sugar,whatever is available.However,I prefer jaggery to sugar as it is rich in Iron.
This is a great treat for the day.You can make it within few minutes.
Have your vitamins and iron daily without popping a pill.Good health doesn't need to much effort!Just some due diligence.
Crush it and add it to any ice-cream.It will enhance the flavor many times.
Add it to any bowl of overnight oats and enjoy!

Instruction of five seed bar

5 Seed bar
- 1/4 cup black sesame seeds
- 1/4 cup sunflower seeds
- 1/4 cup flax seeds
- 1/2 cup white sesame seeds
- 1/2 cup pumpkin seeds
- 3/4 cup raw sugar
- 1 tsp coconut oil
- 2 tbsp. rose water
- 1/4 tsp salt
- Roast the sesame and flax seeds for 5-7 mins, keep it aside
- Roast the pumpkin and sunflower seeds for 5-7 mins,Keep it aside.
- In a pan, add oil and sugar.Let it cook on a low flame until it caramelizes.
- Add the rose water and turn off the heat.
- Now, add the seed mix,salt and mix well.
- Spread the mix on baking paper or a greased tray.Press evenly.
- Draw incisions.Break into desired shapes.
- Store in a dry jar. Serve fresh.
