Indian vegetarian dishes and vegan recipes are a world of magic. However, the magic happens when you use the right ingredient for your recipe. However, one does find it difficult to find the regional vegetables when you move to a new region, mostly due to change of language.
For example, many times we are stuck with questions. What do you call cluster beans in Telegu or Snake gourd in Tamil? What do we call Ivy gourd in Punjabi or winter melon in Gujarati? How do I explain to the vendor without showing him the picture?
Green vegetables are a must for a healthy diet, and there's plenty of variety. Below are some of the most popular green vegetables, along with pictures(click on pictures names, we are adding more pictures) to help you identify them:
Here is a list of vegetables in English and Hindi with their regional names in Punjabi, Gujarati, Marathi, Telugu, Tamil, Kannada and Malayalam. We have divided the list in two sections for easy reference.

Thankyou for the information.
Many of the vegetables that you mention that are not found on an English plate are familiar to me from my local Indian Grocers. Indeed I have cooked with Tindora, Guvar/Gawar, Valor and Turai but there are many more I’d like to try. Drumsticks and long Padwal to name but a few.
