    Air fryer methi mathri

    Mathri is perfect for tea time. It is a great snack to munch on. Perfect for tea time. They come in many variations. Plain made with just jeera and ajwain, methi mathri and spicy achari matthi.The only issue with this snack is traditionally it is fried. Although having something fried occasionally is ok. However, with our sedentary lifestyles, this becomes an issue. Perfect way to munch your loved matthri is by air frying them or making baked mathri. YES, It is still that crunchy and tasty.

    Diwali celebrations can never be complete without good amount of snacks and nuts on the table. These mathris are one of my favorite snack during Diwali and holi. Other holi recipes include mango lassi recipe,Bread roll,Cornflakes chivda,Homemade thandai powder,kheer recipes ,Rasgulla , Nolen Gurer Rasogulla and not to forget the Homemade Holi colour .

    Ingredients

    • 1.5 cup maida plain flour
    • ½ cup whole meal flour replaceable with plain flour
    • 4 tbsp oil
    • 2 tsp. salt or as per taste
    • ⅔ cup water or little more to knead
    • 1 cup fresh methi leaves

    How to make mathri?

    Add the oil to plain flour,whole meal flour and salt. Mix it until you can combine the dough.

    Finely chop the fenugreek leaves.

    • Knead a medium tight dough by adding fenugreek to the bowl. You may knead by hand or use a stand mixer optionally.

    • Take a small amount of dough and roll it into a big flatbread using a rolling pin.Use a cookie cutter to cut circles or any desired shape. You may optionally prick them with a fork, however I prefer to cook them without pricking.

    • Pre heat the air fryer for 5 mins at 180 deg C.Place the mathri in air fryer basket to spread in 1 single layer.Cook the crackers for 12-13 mins at 180 deg C. Spray oil one and flip it so that it is cooked evenly from all sides and are golden brown .

    • Store in a clean dry jar once it completely cools down.

    Variations

    There are many mathri variations. If you like it spicy, you can use left over pickle masala to make your own achari mathri. You can also substitute methi with palak or spinach. Other mathia flour recipes are nimki, sweet namak pare.

    You can also use kasuri methi (dried fenugreek leaves) to make these . Just soak the dried leaves in warm water for 10-15 minutes, drain the water(or use the same for kneading) and knead the flour.

    Equipment

    • kadai/frying pan (traditional method)
    • or air fryer for low oil version
    • cookie cutter

    Ingredients

    • 1.5 cup maida plain flour

    • 2 tsp. salt or as per taste
    • ⅔ cup water or little more to knead
    • 1 cup fresh methi leaves fresh fenugreek leaves or dried methi leaves soaked in warm water

    Instructions

    • Add the oil to plain flour,whole wheat flour and salt. Mix it until you can combine the dough
    • Finely chop the methi leaves
    • Knead a medium tight dough by adding all ingredients to the bowl. You may knead by hand or use a stand mixer optionally.
      Take a small amount of dough and roll it into a big flatbread using a rolling pin.Use a cookie cutter to cut circles or any desired shape.

    In air fryer

    • Pre heat the air fryer for 5 mins at 180 deg C.
    • Place all the mathri in the basket.
    • Cook the crackers for 11-12 mins at 180 deg C. Spray/brush oil once and flip it so that it is cooked evenly from all sides and are golden brown .
    • Store in a clean dry jar once it completely cools down.

    Traditional method (frying)

    • Heat oil and fry them crisp.
    • Ensure oil remains medium hot. If the oil goes cold, you may see some boils on the cracker. If it is very hot, your mathri will become soft.
    • Place the crackers on a tissue to soak extra oil.

    Notes

    1. To make mathri only with whole wheat i.e. aata and avoid plain flour i.e. maida, add 1 teaspoon of semolina i.e.sooji and additional 1 tbsp. of ghee/oil to whole wheat flour while kneading it.
    2. You may use any combination of plain flour/whole wheat flour/oats flour

    Storage

    Store air fryer mathri in air tight container at room temperature

    FAQs

    Can we use kasuri methi?

    If you do not have fresh fenugreek leaves at home, you may use dried leaves or kasoori methi you can make these mathia in air fryer.

    What are benefits of fenugreek?

    Methi or fenugreek promotes hair growth.
    It is also advised to new mums as it improves milk.
    If you want to improve iron and haemoglobin, add methi to your diet.
    Eating methi seeds on an empty stomach,after soaking them overnight, aids digestion.
