    Air fryer mixed vegetables | Mix vegetable curry

    Air fryer mixed vegetables recipe is a yummy main course which tastes great both with rice or roti. It is flavorful and best use of left over vegetables in your refrigerator. The flavors remind me of tava sabji which is traditionally made in a cast iron pan or skillet. However, it takes both too much oil and time to make it at home to get the desired results.

    I love making this simple air fryer roasted vegetables recipe in my ninja air fryer, just before the market day. It helps me finish any veggie that has been left over and simply help clear out my pantry too.

    Equipment

    • air fryer
    • mixing bowl
    • bowl + spoon

    Ingredients

    Vegetables

    • carrots
    • cauliflower florets
    • potatoes
    • red and green peppers
    • peas

    Spice mix

    • coriander powder
    • red chili powder / paprika
    • turmeric powder
    • garam masala powder
    • indian curry paste (onion,tomato,ginger,chillies)/Or you can use any store bought pasta sauce
    • salt as per taste

    Instructions

    1. In a mixing bowl, add chopped carrots, cauliflower florets and potatoes along with oil.

    2. Preheat the air fryer at 180 C| 375 F for 10 minutes.

    Toss the veggies(chopped carrots, cauliflowers and potatoes) with oil and Air fry for 7 minutes.

    3. In a separate bowl, add all the spices - turmeric, red chili powder or paprika, garam masala powder and coriander with oil and the curry paste.Mix them nicely.

    4. In a bowl add your peas, chopped green and red peppers.

    5. Add the spice mix to your mixing bowl.

    6. Now, add the semi air fried vegetables(potato,cauliflower,carrots) to your mixing bowl.

    7. Mix everything with a spoon so that each vegetable is coated with spice mix .

    8. Place the spicy vegetables back into the air fryer basket.

    9. Air fry all the vegetables for 10 mins at 180 C|375 F.

    10. Serve hot with rice or roti.

    Variation

    You can make roasted veggies in air fryer with minimal spices too. Use anything like rosemary, parsley, thyme or chipotle. We have added zucchini, pumpkin, broccoli and peppers in this recipe.

    Substitution

    You may add broccoli instead of cauliflowers if you like.

    Storage

    Store it in refrigerator for 2-3 days. You can also freeze it.

    • Air fryer (I use my Ninja foodi)
    • Mixing bowl
    • bowl + spoon

    Ingredients

    • 1 tbsp. oil
    • 6-8 medium cauliflower florets
    • ½ medium green bell pepper cubed
    • ½ medium red bell pepper cubed
    • 1 medium carrot chopped
    • 1 medium potato chopped
    • ¼ cup peas

    Spices mix

    • 1 tablespoon oil
    • 3 tbsp. Indian curry paste Use this link to make your curry sauce. Or you can use any store bought pasta sauce
    • 1 tbsp. coriander powder
    • ¼ teaspoon turmeric powder
    • 1 teaspoon paprika or red chili powder , or as per taste
    • 1 tbsp. garam masala powder
    • salt as per taste
