    Vegan fruit custard | homemade custard powder recipe

    There are many ways to make a fruit custard. It is yummy and simply delicious. One of my favorite desserts, which I always wanted to make vegan. Vegan desserts are delicious be it ice creams or baklava. Creamy vegan custard will bring a big smile to your face.

    How to make fruit custard?

    Traditional recipe: We whisk eggs, sugar and cornstarch with milk to make a custard in the west. Cook it on low medium heat in a large saucepan. Later it is served as is or as fillings in buns, tarts, donuts and cannoli.

    Indian recipe (dairy based):The Indian fruit custard recipe is eggless. We add 2 tablespoon of custard powder with some milk in a bowl to make a slurry. Later, we add this slurry to a saucepan of hot milk. Once ready, we serve it hot or cold. Some people like to serve warm custard with cake. (Absolutely delicious!). Most people serve it cold as a dessert by adding some seasonal fruits to it.

    Another way you can have is gluten-free custard but it still contains dairy. This is a recipe you can eat during Hindu fasting as it is devoid of cornflour.

    Ingredients

    • corn flour
    • coconut flour
    • Raw sugar
    • water
    • saffron strands / Turmeric
    • Mixed fruits for serving

    Instructions

    1. Grind the raw sugar,crush the saffron strands, mix all dry ingredients.

    2. Use ⅓ cup mixture for 1 cup water for thick custard. You can add 1-2 tablespoon more if you want more thicker custard.

    3. Heat water in a saucepan, once warm mix little water with custard mix,use a whisk to make a slurry. Use a whisk to mix the cornflour mix evenly.

    4. Add the wet custard slurryto the saucepan with water,continue to cook.

    5. Use a whisk to mix the ingredients while you cook. Once it comes to boil,turn off the heat

    6. Allow the custard to cool down,transfer to the fridge if you like to serve it cold .Serve warm or cold as per your liking,whisk the custard if you find it very thick once cooled down.

    Vegan custard recipe

    Vegan custard is a delicious dessert which can be served with fruits, wobbly jelly or vegan cake. Yummy and delish!

    Equipment

    Ingredients

    • ⅓ cup corn flour
    • ⅓ cup raw sugar powdered after measuring
    • ⅔ cup coconut flour
    • ⅛ teaspoon saffron strands
    • 3 cups water

    Instructions

    Prepare the Custard Powder Base:

    • If using raw sugar, grind it into a fine powder.
    • Crush saffron strands for enhanced flavor and color.
    • Add both to the dry custard powder mix and whisk to combine thoroughly.

    Mix the Custard:

    • Heat 1 cup of water (or plant-based milk) in a saucepan over medium heat until warm.
    • In a small bowl, take ⅓ cup custard powder and mix it with 2-3 tablespoon warm water to form a smooth paste. Use a whisk to avoid lumps.

    Cook the Custard:

    • Gradually add the custard paste to the saucepan of warm water, whisking constantly to prevent clumps.
    • Bring the mixture to a gentle boil, stirring continuously.

    Thicken the Custard:

    • For a thicker consistency, add 1-2 tablespoon more custard powder paste while whisking. Allow the mixture to simmer for 1-2 minutes.
    • Once the custard thickens, turn off the heat.

    Cool and Serve:

    • Let the custard cool to room temperature. If serving cold, transfer it to a bowl, cover, and refrigerate for at least 1 hour.
    • Before serving, whisk the custard to loosen it if it becomes too thick.

    Variations and Substitutions

    Traditional custard is made with egg yolks. However there are many egg-free version, dairy based custard recipes which are made with corn starch and vanilla essence. Brown and polson and many local brands sell vanilla custard powder , even some other flavors like strawberry and chocolate but they may have milk powder added to it. Check the label before usage.

    To make an egg-free custard:  Rajgira /Amaranth flour has a slight aftertaste when you make vrat ka fruit custard. Sabudana /tapioca flour is more neutral. You may use either of them. If you are particular, you may add teaspoon of cardamom powder or few drops of organic vanilla bean paste / vanilla extract (not commercial essence) for a natural vanilla flavour. However, this recipe is dairy based but is gluten-free.

    You can make your own vegan custard powder and enjoy delicious vegan custard anytime you want. You can also use this recipe later to make a custard pie and custard tarts. Also use easy dairy free custard sauce as a filling in vegan donuts.

    ​You can make this recipe with preffered milk like almond milk or rice milk.

    Top tip

    If you want to serve custard after some time, store the chopped fruit and custard mix separately. Once you add citrus fruits to the custard, it must be served immediately. If you keep it for long, it will release water later and changes consistency.

    Storage

    Store the custard powder in a glass bottle. It says better in the fridge.

    FAQ

    Why is my fruit custard bitter?

    If you add citrus fruits and leave custard for a long time, it may turn bitter. Best to add citrus fruits just before you serve.

    Can fruit custard eat next day?

    Yes, it stays good for 1-2 days. However, bananas might get discolored. If you intend to eat fruit custard later, store the custard separate.Add fresh fruit when you serve.

    Can you reheat custard the next day?

    You can reheat plain custard in microwave for 30 seconds, stirring once and reheat until it reaches your desired temperature. You can also heat it on stove on a low medium temperature.
