    Christmas is round the corner and Holiday season too. It is a time to have some celebrations finally. Be it a small gathering of friends or just your family. It is a time to thank everyone for supporting each other.

    Although, 2020/2021/2022 has been a long drab on all our lives. We must remember we are lucky to see another day. Here is wishing 2023 looks better. It is a time to celebrate our life. No celebration is complete without a cake. No cake better than a delicious Vegan Xmas cake. Recipe for vegan fruit cake might look bit tedious, but it is worth every morsel. Also, a list of delicious party recipes for all guests vegan!

    Why do we love cake?

    Baking is a therapy. Cakes give you happy memories. We all want a cake for a pick-me-up. We love it and want it each time. No wonder so many bakers exist across the world. You may be a home baker or a commercial one. You can never escape from a magic of a cake. Nothing speaks of Xmas, like the rich fruity plum cake. It is also a healthy vegan cake as it is full of nuts in every bite. Instead of buying a cream based cakes eating one with nuts and seeds is better.

    Christmas cake is flavorful and rich. Most of these Christmas cake recipes have eggs, rum or alcohol. However, recipe for eggless fruit cake is easy. Vegan Christmas fruit cake is our alcohol-free, dairy-free, egg-less version of the original traditional Christmas cake recipes. It is great with tea and some snacks. It is amazing to have a rich homemade cake instead of having to buy a vegan cake. You will love eating it time and again.

    This vegan fruit cake recipe is fully loaded with healthy nuts. I love nuts be it almonds or cashews and pistachios. The more the merrier. What I love about this cake, is its rich in texture and has good amount of nuts. Some people think only a cake with egg gives you that flavor. Vegan cake is great in flavor too, especially this one. In fact, you will not even realize this vegan xmas cake is eggless and vegan unless you tell people. You can also make this as the fruit birthday cake if you cannot wait for X-mas!

    If you are a teetotaler like us ,and also wanna go vegan, this is just the cake for you. Yummy and delicious! Usually people add rum to cake to give it that bitterness. However, adding fruit peels and nuts to orange juice and leaving it overnight does the trick.

    My Christmas memoirs

    While the world celebrates Christmas, I celebrate it with a special reason. It's my Dad's birthday. He is my Santa Claus. I also remember attending many Xmas parties at our friends place as a kid. Though we may not be in the same city anymore, those memories always stay with us. It brings us smiles from a time when things were so simple. It was a time to make merry and ring in the new year with endless parties. Even now I love to celebrate with my own group of friends. However, I am not the one for cutting trees and ham and turkeys. I had rather go with vegan fruitdcake and plant based recipes for this end of year celebration.  Christmas or No Christmas... You can make this cake anytime of the year. Smile and have a happy cheer!

    It is my happy cake as it is egg-free and dairy free too. Vegan Christmas cake is amazing. It is good for those who got allergies yet still love their cake. Many people can't eat eggs or dairy and feel a little left out. This one has no reservations. Those who are allergic to nuts, can still make this cake with tutti fruity or fruit peels.

    Finally a celebration of humans includes everyone 🙂 Yes I m yet to make a gluten-free version. That probably next Xmas.

    Ingredients

    • orange juice with rind or apricot juice
    • mixed fruits, fruit peel, raisins, berries
    • mixed nuts pecans/cranberries or mixed crushed dryfruits (almonds,pistachio,cashew)
    • chia seed meal or flax seed meal
    • coconut sugar or raw sugar
    • vegetable oil
    • plain flour
    • baking powder
    • baking soda
    • almond milk or oat milk (or cow's milk for vegetarian option)

    How to make vegan Christmas cake?

    • Take orange juice in a bowl,add the store bought mixed fruit mix with dried berries,raisins

    • Allow it to soak for 4 hours/overnight. If you are in a hurry, warm up the juice a bit and add the mixed fruits.Leave it to cool for 30 minutes.

    • Add the flax seed/chia seed meal to the juice and fruit mix,Allow the flax seed meal to thicken up in the next 5-10 minutes

    • Add the coconut sugar/ raw sugar and mix well until it dissolved. Add almond milk to the mix and stir.

    • Add oil and mix well

    • Now, start adding the flour(after sifting flour with baking powder and baking soda).

    • Keep mixing and adding the flour. Add more almond milk if required.

    • Preheat the oven for 10 mins at 160 degree C. Transfer the cake tin(or divide across 2 tins) lined with baking sheet.

    • garnish the dry fruits on the cake
    • Bake in a fan-forced oven at 160 degree C for 45-50 mins(if using single tin)/35-40 minutes if using 2 cake tins) or until a toothpick comes out clean.

    • Take it out of the oven,allow it cool completely before cutting into slices.This cake is very soft and crumbly(simply melts in the mouth)

    how to make vegan Christmas cake in air fryer ?

    In a pre heated air fryer, cook at 160C for 25 minutes (using the bake option) or until the toothpick comes out clean. I have used a 8 inch cake tin for cooking in the air fryer.

    Variations

    You can decorate with crushed dry fruits by chopping them in a food processor.

    Other variations of vegan christmas cakes, is soaking nuts in alcohol instead of orange juice.

    Substitutions

    You can replace chia seed meal with flax seed meal. You may use any egg replacer otherwise while making vegan christmas desserts. If you do not have any such replacements ,just add little more flour (2 tbsp) to make the batter little thick.

    FAQs

    Can you use milk if you are not vegan?

    Yes. You can.  If you do not have almond milk handy, you may replace it with cow's milk. Use the same quantity to make a vegetarian Xmas cake. If you do not like almonds, use cashews.

    Easy Vegan christmas cake is a take on the traditional cake which is made with with eggs.This is an alcohol free christmas cake and a christmas cake without eggs.

    Ingredients

    • 1 cup orange juice with rind or apricot juice
    • 1-¼ cup mixed fruits ¾ cup fruit peel,¼ cup raisins,¼ cup berries
    • ½ cup mixed dry fruits Pecans/cranberries or mixed crushed dryfruits (almonds,pistachio,cashew)
    • 2 tablespoon chia seed meal or flax seed meal
    • ¾ cup coconut sugar or raw sugar.You can reduce the sugar by ¼ cup if you like. Replace with almond milk if the batter is dry
    • ½ cup vegetable oil
    • 2 cup plain flour
    • 1.5 teaspoon baking powder
    • 0.5 teaspoon baking soda
    • ¾ cup almond milk or oat milk (or cow's milk for vegetarian option)

    Instructions

    • Add the chia seed/flax seed meal to the juice and fruit mix,Allow the chia seed meal to thicken up in the next 5-10 minutes
    • Add the coconut sugar or raw sugar and mix well until it dissolved
    • Add oil and mix well
    • Add almond milk to the mix and stir. Now, start adding the flour(sifted with baking soda and flour)
    • Keep mixing and adding the flour. Add more almond milk if required.
    • Preheat the oven for 10 mins at 160 degree C. Transfer the cake tin(or divide across 2 tins) lined with baking sheet.
    • Transfer the batter to a cake tin lined with baking sheet.
    • Garnish with whole nuts or chopped dry fruits on the cake batter.
    • Bake in a fan-forced oven at 160 degree C for 45-50 mins(if using single tin)/35-40 minutes if using 2 cake tins) or until a toothpick comes out clean.
    • Allow it to rest in the oven for further 5-10 minutes.
    • Take it out of the oven,allow it cool completely before cutting into slices.This cake is very soft and crumbly(simply melts in the mouth)

    For air fryer

    • Pre heat the airfryer @160C for 5 minutes (using the bake option)
    • Cook at 160C for 25 minutes (using the bake option) or until the toothpick comes out clean. I have used a 8 inch cake tin,you can use a bread loaf tin as well

    Notes

    I have used the store bought mixed fruit pack, you may replace that with 'tutti fruity,raisins and few orange peel/lemon peel pieces'.
    I have used 2 cake tins of 6inches or 1 cake tin of 8inch.
    The one used in the picture above is cake tin of 8 inches, it was quite deep as well and took little more time (10 mins) to cook compared to being cooked in 2 separate cake tins of 6 inch each.

    Storage

    Store it in refrigerator for 4-5 days. Reheat before you consume.

    Food safety

    • Cook to a minimum temperature of 165 °F (74 °C)
    • Don't leave food sitting out at room temperature for extended periods
    • Never leave cooking food unattended
    • Use oils with high smoking point to avoid harmful compounds
    • Always have good ventilation when using a gas stove

      What size cake tin?

        For the amount of batter used in the recipe, we have used 1 big tin of 8inchs. Alternately, you can divide is across 2 tins of 6 inch. In case of using 2 tins, the time to cook will be less(by 10 minutes)
