    Orange vegan muffins | Chia seed muffins

    Orange vegan cake is a soft moist tangy cake. It reminds me of orange, pineapple vegetarian eggless cakes in bakeries back home. Small Iyengar bakeries in the by-lanes of southern India, cater to the small hunger pangs of hundreds on the way home. Be it kids coming back from school, sport practice or professionals all love a small bite of cake. They serve fresh baked sweets and savory daily and generally over by the end of the day. This orange vegan cake is our take on all those cake slices back home.

    Oranges come in plenty when in season. You can enjoy making a jam,preserve,cookies using them. Dry the peels to make your own face scrub. Apply it with rose water, rub and wash. Easy and vegan way to make your face fresh. Citrus mandarins and oranges are just the pick me up you need after a dull long tiring day at work.

    What is vegan cooking?

    It is a strict vegetarian diet which also excludes the use of meat, eggs, honey and dairy products. Vegans also like to use no-animal product in things they use in daily life.

    • fan-forced oven

    Ingredients

    • all purpose flour/ plain flour / maida
    • oat flour
    • powdered sugar
    • baking powder
    • baking soda
    • oil
    • chia seeds powdered +½ cup water
    • reduced navel / valencia orange juice +zest (refer step below)
    • oat milk

    Garnish

    • 1 tbsp. chia seeds for garnish

    Instructions

    • Boil 1 cup of orange juice along with rind of 1 orange,let it come to gentle boil and once its reduced to ½ cup, Let it cool.

    • Move this mix to a bowl ,Add powdered sugar to it.

    • Add the powdered chia seeds(with water),oil and oat milk. mix the ingredients well with a beater.

    • Sift oat flour, plain flour along with baking soda and baking powder and start adding this to the mixture slowly.

    • Start mixing the batter with a handwhisk,using the stand mixer to mix them might over mix the batter

    • Preheat oven for 10 mins. Meanwhile, pour the batter in cupcake liners.

    • Garnish with chia seeds optionally.

    • Bake for 25 mins at 170 deg C or until toothpick comes clean.

    Substitutions

    You can use any nut milk instead of oat milk if you like.

    Variations

    You can also do chocolate tofu vegan cream on it or bake whole orange cake.

    Storage

    Store it in an air-tight container. It lasts 3-4 days.

    Top tip

    Grind oats to make oat flour in advance. This way you can get oat milk anytime you need. Just mix with water and strain. It also helps you avoid market based plant milks which might have other elements added.

    • ¾ cup oat flour can be replaced with ¾ cup wholemeal flour
    • ½ cup raw sugar powdered
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ cup oil
    • 2 tbsp. chia seeds powdered +½ cup water
    • ½ cup reduced naval orange juice +zest
    • ¼ cup oat milk

    Garnish

    • 1 tbsp. chia seeds for garnish

    Why is my vegan cake not fluffy?

    overmixing batter & no using right egg replacer can cause it.

    Does vegan cake have milk?

    It has plant based milk not dairy milk.

    What is not in a vegan cake?

    eggs, milk & milk products, honey. Only raw sugar is used not white sugar.
