What is vegan cooking?

- all purpose flour/ plain flour / maida
- oat flour
- powdered sugar
- baking powder
- baking soda

- chia seeds powdered +½ cup water
- reduced navel / valencia orange juice + fresh orange zest (refer step below)
- oat milk
Garnish
- 1 tbsp. chia seeds for garnish
Instructions
- Boil 1 cup of orange juice along with rind of 1 orange,let it come to gentle boil and once its reduced to ½ cup, Let it cool.
- Move this mix to a bowl ,Add powdered sugar to it.
- Add the powdered chia seeds(with water),oil and oat milk. mix the ingredients well with a beater.
- Sift oat flour, plain flour along with baking soda and baking powder and start adding this to the mixture slowly.
- Start mixing the batter with a hand whisk. (using the stand mixer to mix them might over mix the batter.)
- Preheat oven for 10 mins. Meanwhile, pour the batter in cupcake tins lined with paper liners.
- Top tip: You can use piping bag to pour the wet batter. Another option is using or a cookie scoop or an ice cream scooper.
- Garnish this sweet treat with chia seeds optionally.
- Bake in a preheated oven for 25 mins at 170 deg C or until toothpick comes clean.
Substitutions
- You can use any type of plant-based milk instead of oat milk if you like. Almond milk, soy milk or hemp seed milk. I love making hemp seed milk in my Vitamix. It is quite neutral in taste and goes great even in masala chai.
- You can use any vegetable oil to make this cake batter. I use either olive oil or sunflower oil in this vegan recipe. Vegetarians can use ghee instead of oil.
- You can use lemon juice and zest to make a lemon cake alternatively. Other citrus fruit that can be used are blood oranges, mandarins, tangelo and yuzu.
- whole wheat flour can be used instead of plain flour. However, you may need to adjust the liquid content in the cake for a flowing batter.
- For garnish you may use poppy seeds instead of chia seeds. You can also put a simple orange glaze and an orange peel on tops of the muffins.
Variations
You can also do chocolate tofu vegan cream on it or bake whole orange cake. You can also bake vegan chocolate orange cupcakes by adding some orange zest to chocolate cupcakes. Another great way is decorating orange muffins with a delicious chocolate frosting on top of each cupcake. Orange frosting also makes a great garnish on this delicious dessert. Orange buttercream or simple icing sugar also makes it look special.
Bake them in a jumbo muffin tin for a simple breakfast or bake mini muffins in a mini muffin pan for bento boxes.
Storage
Let your delicious cupcake cool on a cooling rack until it comes to room temperature. Store these vegan cupcakes in a airtight container. They last 4-5 days in refrigerator.
Top tip
Grind oats to make oat flour in advance. This way you can get oat milk anytime you need. Just mix with water and strain. It also helps you avoid market based plant milks which might have other elements added.
