Air fryer corn ribs are corn-on-the-cob strips coated in a simple onion and garlic seasoning paste, then cooked until the edges are browned and lightly crisp. They are fun to eat, quick to make, and work well as a vegetarian snack or side dish.
This version uses onion powder, garlic powder, soup stock, oil, salt, and a little water to make a paste that coats the corn well. If you enjoy corn-based snacks, you may also like these air fryer corn fritters. For more snack ideas, browse these air fryer Indian snacks.

Why Make This in the Air Fryer?
The air fryer cooks corn ribs quickly with less oil than deep frying. The hot air helps the seasoning paste cling to the corn, and the edges brown nicely without needing a large pan of oil.
Quick Summary: Cut the corn into ribs, coat with a simple seasoning paste, air fry, brush with the leftover mix during cooking, and continue until the corn is browned and tender.
Pro Tip: Cutting corn ribs can be tricky. Use a sharp knife, keep the cob steady, and cut slowly lengthwise. If you find pre-cut raw corn ribs, they make this recipe much easier.
Ingredients
- Corn cobs or raw corn ribs
- Onion powder
- Garlic powder
- Soup stock powder
- Oil
- Salt
- Water
Use salt carefully because soup stock powder may already contain salt. If your soup stock is very salty, start with less salt and adjust to taste.
Step-by-Step Instructions
Step 1: Cut the corn ribs
Cut the corn cobs lengthwise into rib-style strips. You can also use store-bought raw ones if available. I got them from Costco but Trader Joes also sells them.
Step 2: Make the seasoning paste
Mix onion powder, garlic powder, soup stock powder, oil, salt, and water in a bowl. Stir until it forms a smooth paste.
Step 3: Coat them
Add them to the bowl and toss well, so the seasoning paste coats the kernels and sides.
Step 4: Start air frying
Preheat the air fryer to 185°C or 365°F. Arrange the coated ribs in the air fryer basket, keeping them spread out as much as possible.
Step 5: Brush with leftover mix and finish cooking
During cooking, brush the corn ribs with the leftover seasoning mix, including the oil in the bowl. Continue air frying until the corn is cooked and the edges are browned. Total cook time is 12 to 13 minutes at 185°C or 365°F.
Variations
- Spicy cornribs: Add a little red chilli powder or chilli flakes to the seasoning paste.
- Smoky cornribs: Add a pinch of smoked paprika if you like a smoky flavour.
- Lemon-style cornribs: Squeeze lemon juice over them after air frying for a fresh finish.

Substitutions
- Soup stock powder: Use vegetable stock powder or a mild seasoning powder. Check the salt level before adding extra salt.
- Onion powder and garlic powder: These work best because they mix easily into the paste. Fresh onion or garlic can make the coating wetter and may brown differently.
- Oil: Use any neutral cooking oil you normally use in the air fryer.
- Frozen or pre-cut corn ribs: If using frozen ones, thaw and pat them dry before coating, so the seasoning paste sticks better.
