    Roasted veggies is one of the best ways of having healthy dinner. Especially if it is cold outside. You can just pair it with some soup or garlic bread and relax. Roasting veggies in an oven or having air fryer roasted vegetables helps you relax too.

    Airfryers are faster ovens and does all the cooking without you standing and cooking for hours. You can use any herbs you have handy. Be it mint or fennel, thyme or rosemary. Add some feta to air fryer veggies or just make it vegan. I love pairing it with mushroom soup or Italian bean soup for a hearty meal. You can also use roasted veggies to make a perfect grilled sandwich in air fryer, with or without pesto/ hummus.

You can have these with a mint chutney or vegan mayo dip/ketchup at any time of the day. Toss them with cooked rice/quinoa/couscous to get a healthy meal.

    Roasted vegetable ingredients

    • Broccoli
    • Pumpkin
    • Yellow & green zucchini,
    • Onions
    • Red & green bell pepper
    • Spices
    • herbs - rosemary/thyme/bay leaf as per taste
    • olive oil
    • salt and pepper to taste.

    • Air-fryer
    • Strainer
    • Saucepan

    How to make vegetables in an air fryer?

    • Chop all veggies in cubes while you preheat the airfryer at 190 deg C/ 375 F for 10 mins.

    • Toss pumpkin and broccoli florets or any other hard vegetables in 1 tbsp. oil.

    • In preheated air-fryer, air fry broccoli and pumpkin at 190 deg C /375 F for 3-4 mins.

    • Toss the remaining veggies with 1 tbsp. oil and add them to the air-fryer basket, Air-fry for 5 mins at 190 C /375 F.

    • Mix chopped parsley with salt & pepper.

    • Add the seasoning to the veggies,toss to mix the seasoning evenly.

    • Then further air-fry at 190 for 3-4 mins. Total cook time 11-13 minutes.

    • 1 oven/ airfryer
    • pastry brush/ spoon
    • 1 strainer for oven
    • saucepan for oven

    Ingredients

    • ½ broccoli Cut in florets
    • 1 cup cubed pumpkin cubed
    • ½ medium zucchini cubed
    • ½ green capsicums / green bell pepper cut in squares
    • ½ red capsicum/ red bell pepper cut in squares
    • ½ onion peeled and cubed

    Spice

    • 2 tablespoon fresh parsely finely chopped
    • 2 tbsp. olive oil
    • Salt and pepper to taste.

    Instructions

    How to make air fryer roasted vegetables?

    • Chop all vegetables while you preheat the air-fryer at 190 deg C/ 375 F for 10 mins.
    • Toss pumpkin and broccoli florets or any other hard vegetables in 1 tbsp. oil.

    Notes

    You can replace these vegetables with any vegetables of your choice, just cook the hard vegetables for few minutes first them add the remaining vegetables.
