Jam drops biscuits are one of the easiest cookies you can bake. Oven-fresh strawberry or cherry jam-filled biscuits are simply yum and perfect when you need a quick pick-me-up. For those unfamiliar with them, the classic "jim jam" biscuits will ring a bell. These are a cleaner, homemade version without additives or preservatives. You can use any homemade jam and make batches with mixed berries, raspberry or lemon-whatever fruit you have at home.

Ingredients
For Homemade Strawberry/cherry jam (or use store bought preserve)
- strawberry or de-seeded cherries
- sugar
- For the cookies:
- Plain flour
- soft vegan butter or nuttelex at room temperature
- chia seed meal
- powdered sugar
- baking powder / baking soda
- salt

- Saucepan
- Sieve
- Stand mixer
- Cling film
- Baking paper / parchment paper
- Oven or air fryer
How to make the cherry/strawberry jam ?
1.Soak the pitted cherries with some strawberries in sugar for 2-3 hours

2. Cook them on low flame for 10-15 minutes.

3.Puree the jam mix and sieve it to get a smooth jam, leave it aside to cool.

How to make vegan jam drops biscuits ?
- Sieve the plain flour, powdered sugar, baking powder and a pinch of salt into a food processor.
- Add Nuttlex to the dry ingredients pulse until the mixture looks crumbly.

3. Add the chia seed gel (chia seed meal mixed with water) to the crumb mixture.
4. Blend again until the dough comes together into a smooth, soft dough.Move this mix to the fridge, this helps to shape them nicely.

5. Roll the dough into small balls, flatten them slightly and place them on parchment paper.
6. Press in the centre of each dough ball using your thumb or the back of a small spoon.

7. Spoon a little strawberry or cherry jam into each indentation.
8. Preheat the air fryer to 160C | 320F for 5 minutes.

9.Place the shaped cookies inside the air fryer basket and cook at 160C | 320F for 14-15 minutes.
10.Allow them to cool completely and store in an airtight container for 5-7 days.

Vegan thumbrprint cookies in air fryer
Cook them in a preheated oven @160C | 320F for 20 - 22 minutes.

Ingredients
For Homemade Strawberry or Cherry Jam
- 250 g strawberries or deseeded cherries
- ¼ cup sugar
For the Cookies:
- 1 ½ cups plain flour
- ½ cup Nuttlex
- ⅓ cup powdered sugar
- ½ teaspoon baking powder
- Pinch of salt
- 1 teaspoon chia seed meal mixed with ¼ cup water chia gel
Instructions
For the Strawberry/Cherry Jam:
- Slice the cherries or berries and mix them with sugar.
- Cover and let the mixture rest for 4-6 hours.
- Cook on low heat for 10-15 minutes until it thickens into a jam.
- Let it cool, blend it and sieve to get a smooth jam.
For the Vegan Cookies:
- Sieve the plain flour, powdered sugar, baking powder and salt into a food processor.
- Add Nuttlex and pulse to form a crumbly mixture.
- Add the prepared chia gel and blend until a smooth dough forms.
- Wrap the dough and refrigerate it for 1 hour.
- Roll into small balls, flatten slightly and place on parchment.
- Press the centre of each dough ball with your thumb or a spoon.
- Add a small amount of jam into each indentation.
Air Fryer Jam Drops:
- Preheat the air fryer to 160C | 320F for 5 minutes.
- Place the cookies on parchment inside the air fryer basket.
- Air fry at 160C | 320F for 14-15 minutes or until lightly golden.
- Cool completely before storing.

FAQs
You may use a store bought preserve if you do not want to make them at home. Sometimes the store bough jams are set like a china grass consistency. In that case, I would recommend to add that kind of Jam at the end of cooking(last 2 minutes)
Thumbprint cookies do not involve rolling the dough instead it is just taking a portion of dough and pressing with your thumb, hence the name. However you can do the same with the below ingredients in this recipe.
Substitutions
If you do not have time to make a jam, use a store bought preserve. Using preserve is better than using a store bought jam as jam is more stiff and gets a burnt flavor post baking. Some people also add ground almonds to the above recipe to make Austrian Linzer cookies or linzer kekse.
Storage
Store in an air tight container for 5-7 days at room temperature. However, eat as fresh as possible.
