I am a huge fan of French boulangerie and Melbourne cafe scene. Each baker is an artist who makes your breakfast special. Whether its sourdough or crossiants. Bagels or muffins. Whether its fluffy sponge cake, invert cake or cream swiss roll. Each great recipe has their own fans. However, there was a baked goodie which made my childhood special. The legendary Cream roll. Also, known as cream-filled pastry horns abroad. This delicious treat was something my dad & I shared in Bhopal every holidays. Poha Jalebi, Samose kachori, and favorite ice cream and gulab jamuns from chappan bhog made my childhood really special as a little girl. Good food does brings back the best memories with loved ones. Though we get it in Melbourne too, making this air fryer yummy cream rolls recipe made us really delighted.

We loved creating fusion recipes for the festive season. Whether it's gulab jamun ice cream or a rasmalai cheese cake. Gulab jamun cheese cake, carrot halwa cheese cake or a trifle. However, using air fryer helped us make many fried dishes like karanji, modak and shakkar pare low oil.

    • 6 cream roll shells

    For frosting

    • 1 cup cream cheese or ricotta cheese Use ricotta cheese for a low fat option.

    • ½ teaspoon cardamom powder
    • few strands saffron

    Instructions

Cream horn shells in air fryer.

    • To thaw the frozen sheets, allow them to sit for a few minutes until they have reached room temperature. Then, take a pizza cutter and use it to cut long strips in the baking sheet.
    • Roll the strips across the cream horn shells.
    • Before starting the cooking process, it is recommended to preheat the airfryer for a duration of 5 minutes at a temperature of 170C/340F. Before placing them on a tray, make sure to line it with baking paper to prevent sticking.
    • In an airfryer, start cooking 170 deg C/340 deg F and bake them for approximately 15-17 minutes or until they turn a beautiful golden brown color. Spray oil once in between. After they are done, allow them to cool before adding the filling.

    Prepare the cheese filling

    • The next step is to combine all of the ingredients by mixing them in a bowl or using a food processor. After mixing the ingredients, carefully transfer the mixture into a piping bag.

    Storage

Once you have filled the cream , its not advisable to store them for long. Store the cream and shells seperately for long term use. (a week for the cream in the fridge is considered safe).

Store cream-filled pastry horns in an airtight container for 3-4 days in refrigerator.

    Variations & Substitutions

For baking in an oven : Bake in a traditional oven @ 170 deg C | 340F (fan forced ) for around 30 minutes or until golden brown.

Filling - I prefer ricotta cheese (even low fat) over cream cheese due to the amount of fat in these. A low fat option can turn runny/wet if you over mix them, so just use mix the sugar with a spoon.

You can also use this filling that I made for Gulab jamun cheese cake shots . Its smooth and does not turn runny but the fat content is high.

    Top Tips

    1. Always check the expiry date of your ingredients. Store them correctly.
    2. Keep everything ready before you start. This ensures you do not end up frustrated mid cook.
    3. Also, ALWAYS preheat your oven or air fryer at least for 5-10 minutes.
    4. Whisk on a low setting, until the frosting incorporates well. Do not over beat it.

    Happy baking!
