Indian sweets come in all shapes and sizes and grace your festive table on special occasions. One such nice recipe is a delicious barfi . There are many different recipes which make every festive occasion unique. One such recipe is lauki ki lauj or nutritious lauki ki burfi. This is a bottle gourd burfi and lower in calories in comparison to others. Learn how to make lauki ki barfi in simple steps.
We have given a twist on the original barfi by adding little coconut flour to it. You can also add desiccated coconut instead of coconut flour if you do not have the latter. Lauki ki barfi/ ghiya burfi tastes more refined and addition of homemade mawa makes it very soft and creamy.
How to make barfi?
All the ingredients are cooked in ghee until they are roasted well. Most aromatic ingredients like saffron,green cardamom powder are added to it along with sugar syrup or boora. Milk solids or khoya act as base. Everything is cooked together until it forms a halwa like consistency. After cooking for some more time, this is set in a greased tray for few hours after making incision with a sharp knife.

Instructions
1.Grate the lauki / bottlegourd for the bottle gourd barfi
2. In a pan, cook the grated bottle gourd with 2 tablespoon of ghee.
3. Once the lauki is cooked, add the milk and mawa. Allow it to mix well and cook on a medium flame.
4. Add sugar and coconut flour. You may add few drops of green food colour if you like at this stage.
5. Cook until its dry and it starts to leave the sides of the pan. You may add more ghee if you like here. ( Top tip: You can also serve this lauki ka halwa if you want to eat it immediately.)
6. Set barfi mixture on a tray for a couple of hours after making incisions. Garnish with more dry fruits
Store it in an airtight container in refrigerator upto 1 week.

Ingredients
- 4 cups grated lauki/bottle gourd
- 2 cups milk
- 1 cup mawa/khoya
- ¾ cup coconut flour/desiccated coconut
- ¾ cup sugar
- 4 tablespoon ghee
- ½ teaspoon green cardamom powder
- sliced nuts for garnish optional
Instructions
- On a low flame,heat 2 tablespoon ghee and saute bottle gourd. Cook for 10 mins.
- Add milk with mawa/khoya/reduced milk. Let is cook on low flame.
- Once the milk has evaporated by 75%,add cardamom,sugar and coconut flour/finely dessicated coconut.
- Let is cook on slow flame, add 2 tablespoon ghee and cook until it comes out as a homogeneous mixture.
- Tranfer it to a tray lined with baking paper,garnish with nuts.
- Allow this to set for few hours until it has cooled down.
- Transfer to the refrigerator for few hours
- Cut into desired shapes.
