    Tomato cucumber salad is one of the easiest of recipes. You can always make it in a jiffy and have it anytime you want a salad. It also ensures you will stick to your weight loss regime .Some people also call it the garden salad as the ingredients can grow easily in your kitchen garden.

    Benefits of cucumber

    • cucumber
    • onions

    Instructions

    In a bowl, add cucumber, tomatoes and sliced onions.

    Mix dressing ingredients together and add it to the salad bowl. Mix it well.

    Hint: Add salt and dressing just before you wish to eat. Adding salt to any raw item will help release juices of the garden salad.

    Substitutions

    You can use cherry tomatoes instead of normal tomatoes. Add brown onions, pink or red whatever is available. You can also add some dill and oregano.

    Variations

    Add some crunchy croutons or mayo instead of this. You can also add some green or red peppers as a variation. You may also add sliced carrots to this garden salad. If you are in a mood for some Greek variation, make tomato cucumber feta salad. Tastes yum!

    Add some boiled chickpeas or sprouts to this vegan cucumber salad. Other variations are cucumber tomato avocado salad and lettuce tomato cucumber salad.

    Storage

    Store the wet ingredients (cucumbers, tomato, onion) separately from dressing. Add dressing whenever you wish to eat frozen/ fresh ingredients.

    Add some nuts if u like or trail mix.

    • 1 cucumber large
    • 1 onion medium, sliced
    • 2 tomatoes medium

    Salad dressing

    • 1 teaspoon juice of lemon
    • ½ tbsp. olive oil optional
    • salt and pepper as per taste

    Instructions

    • In a bowl, add sliced onions, tomatoes and cucumbers.

    Dressing

    • Mix all the ingredients together to make a dressing.
    • Add the dressing to salad just before you serve.

    Notes

    the olive oil is an optional addition to the dressing, you may choose to just season with salt,pepper and lime juice.
