    Trail mix salad is a salad for days when you want some sweetness in your salad but not added sugar, agave or honey. Come on board with raisins and seeds with a hint of balsamic vinegar. Big bowl of salad is a refreshing treat on hot summer days. Whether you like more fiber in your meal or want to have a light meal. You will always feel good after having a salad.

    I love salads (took me 20 years 😉 , I guess that is maturity or middle age speaking!) While your 20s is all about junk food, 30s is about balancing pizza nights with healthy salads. Eating healthy just gives you more energy to deal with everything that is thrown your way. One aims for weight-loss when younger but as you grow older it is only fitness and health that take priority. Here is an easy trail mix salad which helps you enjoy your umami flavors and live healthier too. Learn to make it in easy steps.

    Ingredients

    • cucumber
    • purple cabbage
    • lettuce 
    • cherry tomato 
    • bell peppers/ mixed capsicums
    • onion

    Trail mix dressing

    • golden raisins
    • pumpkin seeds
    • sunflower seeds
    • balsamic vinegar
    • dried berries (I have used cranberries)

    Instructions

    • Mix the dressing ingredients together.

    • Chop all the vegetables.

    • In a salad bowl, add all ingredients along with dressing and toss them together. Serve fresh.

    Variations

    • You may add/remove any ingredients from this so that you get different flavor each time.
    • Instead of Balsamic vinegar, you can try apple cider vinegar ,rice wine vinegar or just plain lemon juice.
    • You can add carbs like cooked wild rice, brown rice or any other grain of your choice.
    • You may also make a vegetarian combination salad recipe by adding some feta cheese to your salad bowl. Some people also make combination salad recipes by adding protein or meat piece to your trail mix salad.

    Substitutions

    Use any nuts you like. You may add more vegetables in trail mix salad recipe as per your choice like snap peas.

    Ingredients

    • 1 cucumber chopped
    • 1 cup purple cabbage chopped in strips
    • 1 cup lettuce chopped
    • 1 cup cherry tomato chopped
    • 1 cup bell pepper yellow & red capsicums chopped

    Trail mix

    • 1 tbsp. balsamic vinegar or as per your taste
    • 2 tablespoon golden raisins
    • 2 tablespoon dried cranberries or any dried berries
    • 2 tbsp. pumpkin seeds
    • 1 tbsp. sunflower seeds
    • Salt and pepper as per taste / optional

    Instructions

    • Chop all the vegetables.
    • In a salad bowl, add all ingredients along with dressing and toss them together.
    • Optionally season them with salt and pepper. I avoid loading the salad with salt so that I can enjoy the flavor of the veggies
    • You may mix all dry ingredients with veggies and add vinegar just before serving.

    Storage

    Store the trail mix ingredients in an air tight jar. Keep the remaining ingredients separate in refrigerator.

    Always mix the dressing ingredients just before you serve. Always chop veggies fresh if possible as they lose nutrients with time.
