    • powdered sugar
    • baking powder

    Ingredients

    • 1 ½ cups plain flour purpose flour
    • ½ cup vegan butter Nuttlex or preferred brand
    • ⅓ cup powdered sugar or coconut sugar
    • ½ teaspoon baking powder
    • Pinch of salt
    • 1 tablespoon ground flax seed or chia seed meal mixed with ¼ cup water chia egg
    • 1 cup vegan chocolate chips or chopped chocolate bars
    • 1 teaspoon coconut oil
    • 8-10 pistachios finely chopped
    • ½ teaspoon vanilla extract optional

    Instructions

    • Sieve dry ingredients into a large bowl
    • Add vegan butter at room temperature into the bowl of a stand mixer, beat on low speed using the paddle attachment.
    • Add dry ingredients into the butter mixture, mix on medium speed to form crumbs.
    • Add the flax egg, mix until a smooth cookie dough forms, scrape the sides with a butter knife.
