    Bread roll - Fry / Air fry

    Stuffed Bread roll or roller as we Sindhis call it,is a Sunday heavy breakfast. Nothing better than stuffed bread potato rolls on a cold winter morning along with a cup of hot tea. Some dishes remain close to your heart even when you grow old. Be it roller or noodles.

    Roller also has a good crunchy outer with soft potato filling inside. This makes it heavier. Thus, make it easier to fill stomach. When IPL is on so this is a great starter with cold drinks and some caramel popcorn.It is a time to sit together and enjoy the match!

    You can also make them when you go for a picnic. This recipe is easy to make. They can be eaten warm or at room temperature. Eat the crispy bread roll with spicy tomato sauce or mayonnaise. If you make them spicy, simple tea would do. You will not need another dip with it.

    Equipment

    • kadai/frying pan (traditional method)
    • or air fryer for low oil version

    Ingredients

    • Bread slices (I prefer brown bread)

    For stuffing

    • Potatoes boiled
    • peas and corn optional

    Spices

    green chilly chopped
    ginger
    cumin seeds
    garam masala
    dried mango powder
    turmeric
    red chilly powder adjust as per taste
    chopped coriander
    Salt as per taste
    Oil for frying or oil spray for air fryer

    Instructions

    Prepare the potato masala 

    • In  a pan, heat oil, sauté ginger, green chilli and cumin seeds. Let it crackle.
    • Add mashed potatoes.
    • Mix spices, salt and add to potatoes.
    • Once the stuffing has been cooked, turn off the heat.
    • Add chopped coriander and mix well. Keep it aside.

    1. Potato masala in a bowl.
    2. Cut the hard edges of the bread, dip it into water and squeeze the excess water.

    3.Place some potato masala on this soaked bread slice.

    4.Close the ends  from all sides, use an extra slice if required.

    5. Fry in medium hot oil.

    6. Take out when golden brown.

    Serve bread roll with chutney or tomato ketchup

    How to make bread roll in air fryer?

    Repeat the above step for all the slices and make the bread rolls. The balls will expand once they get air fried so make sure the edges are closed properly. If not done correctly, the stuffing will pop out.

    Place the stuffed rollers in the air fryer basket.

    Air fry at 190 deg C for 20-22 mins brushing oil in between 2-3 times.

    Grill 4-5 mins after that.You will need use an oil spray or brush a number of times for making these with white bread

    You can also choose to make the bread roll with brown bread, they give better results as they retain the shape better than white bread.

    As you can see, the final product with the brown bread below, it looks better and is more brown, with the white bread it did not retain the shape well.

    Bread roll recipe

    Bread roll is best eaten hot with tomato ketchup. Whether you fry it or make it in air fryer, it is a snack all ages love alike.

    Equipment

    • 6-8 bread slices Thick sliced and brown bread preffered

    For stuffing

    • 2 large potatoes boiled
    • ½ cup peas and corn optional

    Spices

    • 1 green chilly chopped
    • 1 tablespoon ginger
    • ½ tablespoon cumin seeds
    • ½ tablespoon garam masala
    • ½ tablespoon dried mango powder
    • ¼ teaspoon of turmeric
    • ½ tablespoon red chilly powder adjust as per taste
    • 1 tablespoon chopped coriander
    • Salt as per taste
    • Oil for frying or oil spray for air fryer

    Instructions

    • In hot oil,saute ginger,green chilli and cumin seeds.
    • Add mashed potatoes.Mix spices, salt and add to potatoes.
    • Once the stuffing has been cooked, turn off the heat.
    • Add chopped coriander,keep it aside.
    • Cut the hard edges of the bread,dip it into water and squeeze the excess water.
    • Add spoonfull of mashed potatoes in the center of the bread and close it from all sides.

    Traditional frying method

    • Heat oil in a kadai. Fry the bread roll until crisp and brown evenly on all sides.

    Air fryer version

    • Follow all the steps to make the bread roll. Place it in the basket of air fryer (preheated for 5 minutes)
    • Air fry at 190 deg C for 20-22 mins brushing oil in between 2-3 times.
    • If using white bread ,use the grill option at the end for 4-5 minutes to get the brown colored bread rolls, this is not required in case of brown bread.
    • Serve hot with mint chutney or tomato ketchup.

    Storage

    Make the masala and store it in refrigerator while you are cooking breakfast. This saves the time when you want to serve it as snacks later in the day.
