    Grinding flour in vitamix blender using wheat grains

    Vitamix blender is a high-powered blender which helps even an amateur make delicious recipes. However, not many know this versatile machine can also replace an actual grain mill. Yes, you read it right? You can grind your own flour. Vitamix machine is a do-it-all. This powerful motor can help you grind wheat berries into wholemeal flour.

    This takes your cooking to a new level. It is also great for people who have allergies and are coeliacs. You can use fresh ground flour to make an artisan bread. Make whole wheat breads, bean flours, pastry flour, pie crusts, grind coffee beans and make your own nut butter. It does a great job at everything. Vitamix recipes can change the way you look at food. Eating well will lead to good health in the long run. After all, we are what we eat.

    I remember my parents getting their flour from an atta chakki (flour mill). My grandparents actually had a mill at their home set in the ground. That memory kind of stayed with me. Store-bought flours were good as we had no option earlier. However, grinding your own cup of wheat berries after using this different blade gave us satisfaction like no other. We could get the desired consistency of our own fresh flours. Whether it was mota besan (thicker chickpea flour), idli dosa batter or brown rice flour, making everything became convenient.

    Equipment

    • Vitamix 2300i or you can choose any model , i prefer the ascent series

    Ingredients

    • whole wheat grains - This is the most important ingredient and depending on the quality of the wheat grain, you will get dry or soft flatbreads. If you use a wheat grain that has not aged (new crop not older than 6 months), then the moisture content is high and the flatbread is dry. One of the option that got better results for my family was soft white wheat berries, here is the link on amazon
    • Water - to knead the flour

    Instructions to grind flour

    The grinding takes between 60 seconds to 90 seconds . The more you process, the finer it gets.

    1. Measure a cup of wheat grains and load it in the Vitamix dry container.

    2. Grind it for 10 seconds on 1 and increase the speed to 10 for upto 1 min or more until you get the desired consistency.

    Use a tamper to push down from the edges.

    Let it cool in a steel bowl. Once, at room temperature, store in a glass jar/ steel container.

    Hint: You can mix any other grains like rye, spelt, chickpeas, beans to make your own multi grain flour. This high speed grinder is perfect for grinding anything u like even though the blades don't look that sharp.

    Additionaly ,if you find the flour little coarse you can

    1. Grind it for more time, around 1 min 30 seconds
    2. Pass the flour through a sieve so that you seperate out the coarse flour and re grind it again.

    Instruction to make homemade flatbread/chapati

    1.Knead the flour with water in a medium soft dough.

    2.Take a small portion of the dough and roll into a round shape

    3. On a hot cast iron griddle, cook the flatbread partially for few second on 1 side.

    4. Flip over to the other side and cooking for few seconds. cook this side completely.

    5. Now move the tava/griddle out and cook the partially cooked side on the flame

    6. The flatbread will swell up,cook for few seconds,take off from the heat.

    7. serve warm.

    Ingredients

    • 1 cup whole wheat grain
    • ⅓ cup water 1 cup wheat flour needs between ⅓ cup to ½ cup water

    Instructions

    • Transfer it to metal/glass container.

    Wholemeal flatbread

    • Knead the flour with water in a medium soft dough.
      Take a small portion of the dough and roll into a round shape
    • On a hot cast iron griddle, cook the flatbread partially for few second on 1 side.
      Flip over to the other side and cooking for few seconds. cook this side completely.
    • Now move the tava/griddle out and cook the partially cooked side on the flame

    Notes

    Substitutions & variations

    You can also substitute whole grains with white rice to make rice flour. You can grind different grains to get different batches of flour and mix it together. Alternatively, you may add handful of various grains at once and then let Vitamix container grind it together.

    You can mix different types of grains to make multigrain flour.I like to add little black chickpeas and corn to make this multigrain flour.

    If you want to grind to a fine powder, run the vita-mix blender for longer by grinding at variable speed. Go from 1- 10 in 30 seconds. This will result in all purpose flour. fine flour can be mixed with baking powder and baking soda to make your own self raising flour.

    Top tip

    Warm flour will stick to the sides of the container after grinding process completes. You may use an under blade scraper to remove it.

    FAQ

    What is the difference between wet and dry Vitamix container?

    The dry pushes ingredients upwards. Hence, wet container is great for smoothies, juices, sauces, dressings, hummus, bread dough, and nut butters. The dry container is great for grinding own grains. I find making dosa idli lentil batter comes out better in the dry jar though.

    Can you use Vitamix dry container as food processor?

    You can do some chopping and mixing but you cannot do slicing in it.

    Is Vitamix jar dishwasher safe?

    Best part the jars are dishwasher safe so you can just pop it into a rack for cleaning once it cools down.

    Can you mill wheat Vitamix?

    Yes If you're planning to mill whole grains occasionally, you may use your standard Vitamix container or the wet jar. However, we recommend the Dry Grains container if you plan to mill on a regular basis.

    What's the difference between Ninja and Vitamix?

    This Vitamix high speed grinder is perfect for grinding anything under the sun, even if u see that the blades are blunt and stuck at bottom. The blending technique is totally different here. Good thing is Vitamix blender blades are stuck to the bottom of the jar. It also has a self-clean so you do not need a dishwasher for cleaning.
    Unlike ninja blender where the blade is so sharp that it cuts even if u accidentally touch it. Ninja blades come out and thus needs to be handled more carefully even if you put in dishwasher. I have used both Ninja and Vitamix for years and say it from experience. Vitamix may look pricey but it has a 7/ 10 year warranty depending on the model.

    Conclusion: Vitamix is the king of high end blenders which helps you grind flour, make a smoothie, whole fruit juice, make a dough, nut butter soup and even an ice-cream.
