Mexican guacamole is an easy and refreshing dip. It is surprisingly very healthy too. It needs minimal ingredients and has great freshness to it and also one of the main ingredients of Mexican cuisine. This can be added to both veg and non-veg recipes. Be it burritos, nachos, taco or salads. Avocado is easy to eat and make a dip with.
My accidental tete-tete with Guacamole
Mexican cuisine has a flavor similar to Indian one. Easy to veganize or make it vegetarian. Although I have had cheesy nachos back home in India, my first taste of authentic Mexican was in Canberra. Surprisingly, finding a vegetarian restaurant at 9 pm was quite a challenge in the Aussie capital many years ago.
We were visiting Canberra for the Tulip festival few years back. Since then, I have been quite a fan of this cuisine. I love the music as well as the warm and loving hospitality. I am glad they do have options if you do not find other restaurants open. For someone who battles an egg allergy, it was not easy to eat out. Thankfully now, we have so many more options.

Ingredients
- 2 avocados
- 1 medium onion diced
- 2 to matoes diced
- Chopped coriander
- dash of lemon juice
- salt/pepper as per taste
- Dash of olive oil optional
Instructions
- Deseed the avocado,mash with with a fork.
- Mix all remaining ingredients.
- Serve fresh with corn chips.
- Optionally, you may add a dash of Olive oil.
