Vegan chipotle bowl is one of the high protein vegan meals these days. It is made with black rice, avocadoes and purple cabbage. I have never had tofu and broccoli this juicy and succulent. It took me by surprise at dinner last night. In our foodie adventure, Mexican food was quite comforting as the flavor palette is quite Indian-ish. Similar spices and flavors made things little easier when you begin your food journey. Later you are more open to trying more variety once you have tasted few familiar ingredients.

Chipotle Mexican grill changed there twitter handle too in response. 2 days back we also tried it first time on the other side of the world and here is the chipotle tofu bowls recipe we made. It just tasted awesome!

What is vegan chipotle recipe made from?
If you are wondering what it is made from? Mainly red jalapenos that are smoked and dried. Other ingredients are basic spices like cumin, coriander, cinnamon cassia, tomato, oregano, all spice, amchur, garlic annatto, onions etc. It is a rub which is usually put on meat but you can also make sauces and use it for tofu or paneer if vegetarian.

- broccoli
- block of extra-firm tofu
- avocado (sliced)
- Cooked black rice
- pickled red onion / pickled red cabbage
- Sauce ingredients : any bbq chipotle spice, salt, tomato sauce, sugar(powdered) and olive oil.

How to make homemade chipotle sauce?
- In a bowl, mix chipotle spice, salt, raw sugar(powdered) and olive oil to tomato sauce.
- Mix well with a whisk to make a sauce of thick consistency.
How to make chipotle tofu?
Here are the step-by-step instructions.
Press tofu ( extra firm tofu or firm one) to remove any excess water.
- Slice the block into pieces of desired thickness(I recommend 1 cm thick)
- Spread sauce on tofu cubes with a spoon/brush.
- Heat a grill pan, place these slices in a single layer and grill them to perfection.
- Cook and flip on the other side for few minutes.
- Coat it with more chipotle once done to make it extra saucy! Yes you wont regret this!
How to make chipotle broccoli?
- Toss broccoli with salt and olive oil.
- In a pan, heat a spoonful of oil and add chopped broccoli florets to it. Cook it for 4-5 mins on each side
- Once done, toss the broccoli florets with the sauce and mix well. They are juicy and succulent 🙂
How to make black rice?
Soak ½ cup it in 1 cup of water for 30 mins. Drain the excess water and cook rice with 3-4 cups of water. Sieve excess water once it soft. Refer to instruction on packet for reference.
Serving suggestion
- Arrange the burrito bowl with a portion of black rice, sliced avocadoes, tofu and any pickles veggies(I choose purple cabbage). Chipotle vegan bowl is a dish to savor!
Substitutions and Variations
If you do not have black rice at home, you can replace it with a portion of brown rice, white rice or quinoa.
If you do not have firm tofu, you can use a tofu scramble in chipotle recipes bowl. Vegetarians may use paneer although I will recommend this is a very good way of eating tofu do not miss it!You can also pair it with brown rice, black beans, pinto beans, vegan sour cream, fajita veggies , romaine lettuce and chipotle peppers / poblano pepper in a large bowl.
Storage
You can cook extra rice and eat it for two times. Purple cabbage, avocadoes should be sliced fresh.
Top tip
air fryer tofu and broccoli can be enjoyed with some extra lemon juice as a snack too. You can add grilled corn and lemon juice if you like.
Food safety
Tofu expires within 3-4 days once open. Hence, it is always advisable to check the expiry date on the packet. If it tastes sour or rancid. Please discard.

- 300 gm firm tofu or 1 block
- 1 medium broccoli florets
- ½ cup black rice
- ½ avocado sliced
- ¼ cup pickled veggies purple cabbage or onions or cucumber

- ¼ cup tomato sauce
- 2 teaspoon barbeque seasoning with chipotle remove or add as per your taste
