for the dip
- 1 medium avocado
- 1 tbsp lemon juice
- 2-3 tbsp virgin olive oil
- salt as per taste
mix salad ingredients
- 1 cucumber diced
- 8-10 cherry tomatoes halved
- 1 cup canned/boiled beans/chickpeas
- 1 small onion diced
- handlful of salad leaves
