    Soya nuggets or soy chunks is a great source of protein for those on a vegan diet. It can help you make heaps of delicious recipes. There are many soya recipes you can relish. whether it's a soya nuggets curry or pulao, soy curl taco or soya granules manchurian. Most Indian households know it as nutrella soya chunks. You can make a delicious and easy soya chunks curry and nutrela pulao. While the meal maker curry is a nutri nuggets recipe with a slightly runny gravy, soya chunks pulao is a rice dish which can be customized according to the mixed vegetables leftover in the fridge. You would always find this recipe in the recipe booklet which would come with stovetop pressure cooker like Hawkins and Prestige and now also the instant pot recipes.

    Ingredients

    • Soya nuggets: Protein-rich meat substitute, ideal for vegetarian dishes.
    • Onion: Adds sweetness and depth to the base of the dish.
    • Turmeric powder: Provides warmth and earthy flavors, also adds color.
    • Garam masala powder: A blend of aromatic spices that enhances the overall flavor.
    • Red chili powder: Adds heat and spice to the dish.
    • Cumin powder: Adds a nutty and earthy flavor.
    • Coriander powder: Gives a citrusy, fresh flavor to balance the spices.
    • Tomatoes: Use chopped or pureed
    • oil - use any vegetable oil.
    • Salt: as per taste
    • Water

    Instructions

    1. Soak soya nuggets in warm water for 15 minutes. This will make them easier to cook.
      Squeeze out excess water from soaked soya chunks. Put them aside.

    2. Heat oil in a pressure cooker or instant pot on medium heat.
    Sauté the finely chopped onions until soft and light pink. Cook the mixture until the tomatoes are soft and mushy. Add spices once tomatoes are cooked.
    Stir and cook until spices are fragrant.

    3. Add the soaked and squeezed soya nuggets to the pressure cooker. Mix everything together, making sure the soya nuggets are coated with the spices.

    4. Add 1-1.5 cups of water for desired gravy consistency.

    5. Mix well, close the pressure cooker lid, and cook on medium heat until you hear 2 whistles or cook on high (pressure mode) in instant pot for 10 minutes.

    5. After the pressure naturally releases, stir the soya chunks. Serve hot with jeera rice or roti.

    Equipment

    • pressure cooker
    • large mixing bowl

    Ingredients

    • 2 cup soya nuggets
    • 2-3 tablespoon oil
    • 1 teaspoon cumin seeds
    • 1 onion large
    • 3 tomatoes medium
    • ½ teaspoon turmeric powder / turmeric powder
    • 2 tsp. garam masala powder
    • 2 teaspoon red chili powder or as per taste
    • 1 tbsp. coriander powder
    • 1 cup water

    Instructions

    • In a bowl, soak the soya nuggets in warm water for about 15 minutes. This will help soften them and make them easier to cook.
    • After soaking, squeeze out the excess water by pressing the soya chunks between your palms. Set them aside.
    • Heat oil in a pressure cooker over medium heat or use the instant pot in saute mode.
    • Add the finely chopped onions and sauté until they turn soft and light pink.Next, add the finely chopped tomatoes along with salt. Stir and cook the mixture until the tomatoes become soft and mushy.
    • Once the tomatoes are fully cooked, add the spices
    • Stir well and cook for a few minutes until the raw smell of the spices disappears and the mixture turns aromatic.
    • Now, add the soaked and squeezed soya nuggets to the pressure cooker. Stir everything together, ensuring the soya nuggets are coated with the spice mixture.
    • Pour in 1 to 1.5 cups of water, depending on how much gravy you’d like.
    • Mix everything well, close the pressure cooker lid, and cook on medium heat until you hear 2 whistles or cook on high (pressure mode) in instant pot for 10 minutes.
    • Once the pressure has naturally released, open the cooker and give the soya chunks a final stir.
    • Serve hot with basmati rice or roti.
