Potato Curly fries are also called Aloo lachcha namkeen in India,it is a snack which we all have grown up with. It is perfect for chaat (street food) especially lachha tokri chaat and farali chivda. Some people love to eat it just as it is, others like to have it with some bread and sauce. Some like it spicy some plain,others in different flavors. In short, you can never stop eating this Sindhi namkeen.
I cannot remember how many Haldiram aloo lachha packets have gone inside me till date! After all we didnt have French fries as kids, we grew up on occasional treat of Haldiram lachha namkeen.Potato lachha is super tasty as it is fried. Thus, as we grow older, we do limit either by choice or by doctor's advice. There is no harm having it once a while. The problem here, is ye dil mange more!
Hence, here is an aloo lachha recipe which is not deep fried, but made in air fryer. Yes, it is still as tasty and crispy. Yep, you can thank us later , first indulge in it!

Ingredients
- Potatoes (washed and rinsed well)
- Oil
- Salt as per taste
Equipment
- Air-fryer /kadai
- Spiralizer/grater
- Oil spray
Instructions
- Wash and peel a large potato. Ensure it is washed well, so that all starch is removed.
- Use a spiralizer to make the spirals.Spray oil once and toss little salt.
- Preheat the air fryer for 10 mins at 180 deg C and place the spirals in it.
- Air fry for 14-15 mins @180C. Spray oil once/twice in between,turn over after 6-7 minutes.
- Once cooked,keep it on a tissue paper for few minutes, move to an air tight container
Variation - using a mandolin slicer
1.Using a mandolin slicer,make thin strips of the potato,optionally soak them in water for 1 hour,drain the excess water
2. Toss oil on the fries
3. Air fry for 14-15 mins @180C. Spray oil once/twice in between,turn over after 6-7 minutes.
4. Toss with salt and spices(optional) and store in an air tight container.
How to make fried version?
You can wash potatoes thoroughly and grate them using spiralizer or grater, as per the above step. Heat oil in a kadai. Fry it on low medium flame until it is evenly cooked. Mix a spoonful of spices of your choice like red chilli powder or pepper, salt,amchur or dry mango powder.
Variations
You can make this aloo sev in various flavors. Spicy,tomato, lemon,mint, black pepper as per your taste.If you like you can also prepare a farali chevdo after making potato sticks. If you do not have spiralizer, you may use good old grater to make the potato mixture. You can also use this grated potatoes to make lachha tikiya,aloo lachha pakora or aloo lachha paratha
Storage
Store this potato katri in an air tight jar at room temperature. If it softens after 3-4 days, air fry it for couple of mins.

I got an air fryer , I made palak bhajia last time in it but it feels like the besan isnt cooked properly
There was a colour change ,in hindi we could say besan seemed to be a bit kaccha ,it didnt give that frying wala filling

I would suggest to use less water. Also you can break it into smaller pieces once it has been partially cooked and then cook further again.
