Ingredients
One of the important ingredients for this recipe is extra firm tofu. if there much water in the tofu pieces then its recommended to use a tofu press.

Tofu marinade ingredients
- extra-firm tofu, drained and pressed
- Green and red peppers, cut into big square pieces
- soy sauce
- rice vinegar or any other vinegar
- thai curry paste or red chilli paste
- Any plant based milk (coconut milk / hemp seed milk)
- Bamboo skewers, (optionally soaked in water for at least 30 minutes)
- sesame oil or olive oil( oil spray or brushing the skewers)
Peanut satay sauce ingredients
- natural peanut butter or store bought.
- leftover marinade sauce
Instructions
- To make the tofu marinade, whisk together the soy sauce, plant based milk (coconut milk or any other), sesame oil and thai red curry paste in a large bowl.
- Cut the tofu into cubes of desired shapes and add to the marinade.
- Marinate the tofu for at least 30 minutes, or up to overnight.
- Marinate the green and red pepper pieces for 5-10 minutes from the extra marinade leftover from the tofu pieces
- Preheat the air fryer to 180C / 355 degrees F.Thread the tofu cubes onto the wooden skewers.
- Place them on a single layer . Use an oil spray or brush with oil, Air fry the tofu skewers for 14-15 minutes, or until golden brown and crispy.
- While the tofu is air frying, make the peanut sauce. In a small bowl or a food processor , combine the peanut butter with the leftover marinade, Process until smooth.Serve the air fried tofu skewers with the peanut dipping sauce.
Substitutions
- If you don't have an air fryer, you can bake the tofu skewers in a preheated oven at 375 degrees F /190C for 15-20 minutes, or until golden brown and crispy or you can also cook these on a grill pan or a hot grill .
- If you don't have bamboo skewers, you can use metal skewers. Just be sure to soak them in water for at least 30 minutes before using to prevent them from burning.
- If you are a vegetarian you can use paneer for the same recipe

- For a spicier dish, add more red pepper flakes or chilli flakes to the marinade or peanut sauce.
