Here is an eggless mayonnaise recipe which uses tofu instead of eggs. It is completely vegan and vegetarian friendly. It is easy to make and can be stored in a refrigerator. How to make eggless mayonnaise?
- Mix all the ingredients in a bowl.
- Blend using a hand blender until you get a smooth dip.
Store in a jar and refrigerate.
You can use any spice you like cajun, coriander,dijon mustard if you do not have chipotle handy. Adjust spices according to your taste.There are many flavors like adobo mayonnaise, dijon mayonnaise,cilantro mayo,aioli mayonnaise, cajun mayonnaise. Some other variations are avacado mayo and coconut cream mayonnaise.
You may also use silken tofu instead of firm. You can also make eggless mayonnaise from aquafaba instead of egg. Aquafaba mayonnaise, vegan avocado mayo, vegan cashew mayo are some other popular recipes.

- hand blender
- 2 blocks firm tofu
- 2 tbsp. coconut oil
- 1 tbsp. chipotle spice adjust as per taste
- 1 tbsp. apple cider vinegar
- Salt as per taste
- Mix all ingredients in a bowl.
- Blend it using a hand blender until you get a smooth dip.
- Store in a jar and refrigerate.
Extra firm tofu and even firm tofu is better than silken tofu for frying.
For dishes that need marinade, firm is better than extra firm tofu.
You can use it for dips, substitute for eggs during baking, salad dressings, puddings, desserts, etc.
Store in the refrigerator for 3-4 days.
