    Ingredients

    The list of dry ingredients is is limited to

    • Figs - Soften the dried figs by soaking them in water for 1 hour in a large mixing bowl. Once you have plump figs, remove tips, and drain excess water.
    • Dates - Pitted dates
    • Nuts - I like to use a mix of almonds,cashews and pistachios

    Air fryer Vegan fig bars recipe

    You can make these healthy fig bars in the oven or air fryerIt has simple ingredients and is great for a fast snack or dessert.

    Equipment

    • Air fryer

    Ingredients

    • ⅔ cup dried figs
    • ⅓ cup dates pitted
    • 1 cup mixed dry fruits cashews, almonds, pistachios

    Instructions

    • Soak the dried figs in water for about 1 hour to soften them. Once softened, remove the tips and drain the excess water.
    • In a blender or food processor, blend the figs and dates together into a thick, smooth paste. Set aside.
    • Coarsely chop the mixed dry fruits (cashews, almonds, pistachios).
    • In a preheated air fryer at 170 deg C, add the nuts and cook for 7-8 minutes. The nuts should turn golden and aromatic.
    • Add the fig and date paste to the pan with the roasted nuts.
    • Cook for 8-10 minutes @ 170 deg C, mix them in between the cook.
    • Transfer the mixture to a tray lined with parchment paper or a baking sheet. Spread it evenly across the tray using a spatula to create a smooth, even layer.
    • Allow the mixture to set in the fridge for at least 1 hour, until firm.
    • Once set, cut into bars or squares of your desired size and shape.

    In brief, toast the coarsely chopped,grinded nuts.Then make the fig and date paste, cook the mix in the the airfryer. Once ready,spread the mix and allow it to set. Cut into small pieces and serve.

    • Cook for 8-10 minutes @ 170°C | 340F, stirring 1-2 times in between. Transfer to a lined tray. Use a spatula to spread it evenly across the tray.

    • Cut into desired size and shape.

    • Oven Version: For an option, you can use an oven to make the bars. Follow the same steps as airfryer i.e. roast the nuts and then mix with the fig paste and cook again. Compared to an airfryer, the oven will just take little more time to make your homemade vegan fig bar recipe.
    • Cooktop version - You can also make this by cooking on a cooktop. However you need to carefully roast the nuts so that they are not over roasted and when you cook with the date and fig mixture you need to keep an eye out.
    • Spice It Up: Add a pinch of cinnamon or even a bit of ginger garlic paste if you’re feeling adventurous.
