    Khajur & Anjeer roll | no sugar dates and fig roll

    Khajoor anjeer roll is one of the easy sweets you can make for the festive season. Nut rolls are a huge craze and a healthy snack. Fig and dates are a match made in heaven. It is full of nutrition and has essential nutrients like iron, protein and Vitamin E. This healthy sugarless fig dessert roll is a healthy sweet as it has no added sugar. Many people have a sweet tooth but want to avoid commercial sugar. 

    As this anjeer rolls recipe contains no added raw sugar, it is prepared a lot during the Diwali festival. sugar-free dessert is a big market for those who are diabetic but cannot do without traditional sweet recipe.     How can you use figs?

    Figs are both luscious and exotic. You can even have them dried or fresh. Helps your digestion big time. You can have them raw, as milkshakes, sweets and poached too. You can freeze them or just make a good fig ice cream too. These nutritious treats are great as postpartum snacks.and also make everyday cooking fun. You can make anjeer burfi and anjeer kaju roll as a variation by using anjeer mix.

    Equipment

    • Food processor
    • ziplock / food grade plastic
    • pan

    Ingredients

    • 1 cup dried figs or anjeer
    • 1 cup dates or khajoor
    • ¼ cup raisins or kishmish
    • 1 cup dry fruits cashews,almonds,pistachios
    • ½ tablespoon coconut oil
    • ¼ cup water optional

    Instructions

    • If the anjeer/figs & khajur/dates are dry,hard then soak them in water for few hours,drain the excess water.
    • Coarsely grind the nuts in a food processor,keep aside.
    • Grind the dates and figs in a food processor.
    • Heat oil in a pan,add nut mix and cook for 5 minutes.
    • Add the date&fig mix with salt. Start mixing.
    • Turn off the heat and keep on mix until the nuts have mixed well.
    • Let it cool for 15 mins.
    • Using a food grade plastic,form a roll of the above mixture, resembling a sausage.
    • Cool it in fridge for few hours.
    • Cut into small thick circles slowly, of a width, as per your choice.

    Notes

    Anjeer or figs are great for digestion.
    Soak the dates and figs in water only if they are too hard.

    how to make khajur anjeer roll?

    1. Coarsely grind the nuts and keep it aside.

    2. Pulse the dates/khajur, raisins and fig/anjeer.

    3. Heat oil and cook the nuts.

    4. Add the soft mixture of date, fig to nuts.

    5. Cook until it mixes and turn off the heat. Let it cool.

    6. Roll them and cover with plastic film and cut is circles .

    Storage

    Store it on room temperature for 3-7 days. You can also store it in refrigerator or freeze it for later.

        hi there.. thanks for your comments. We generally keep this at room temperature and it surely goes well for few weeks(at least 4 weeks) as long as it stored in an air tight box.

        hi Sarita, Well you can use ghee or any less pungent oil like sunflower oil.
