Tutti frutti ice cream has been a part of our childhood ever since I remember. Back then, it was peachy or candy pink colour ice cream which made our hearts smile. These little cups of delicious ice cream filled with bits of dried bits of papaya were precious.
Pink is my favorite color and so is this favorite ice cream. Even my room was in same pink colour, then how can I resist something sweet that too pink color ice cream! Ice-cream was a rare treat that too with tropical fruit flavors.My parents would drive their car all the way to a petrol bunk at the edge of township to buy it for us. No A.Cs back then, just a small cup to beat the heat during hot summer nights occasionally. It still is an occasional treat with the Melbourne weather. Only, now it is due to cold ever changing Melbourne weather.
Now, we take it a notch higher as we make it a homemade treat. Homemade tutti fruitti ice cream is a stuff every child will love. Candy pink tub of goodness which makes every summer happy. Our birthday parties always had tutty fruity ice cream and gulab jamun in the menu.

Tutti-frutti ice cream Ingredients
- paneer or cottage cheese
- milk
- tapioca flour/ custard powder
- rose syrup or Roohafza
- sugar optional
- thickened full cream, min. 35% fat.

Ingredients
- ¼ cup paneer from 1.5 cup milk
- 2 tablespoon milk( for mixing with paneer, tapioca flour)
- 3 tablespoon tapioca flour/ custard powder
- ½ cup rose syrup or roohafza
- ¼ cup sugar optional,depends on sweetness of your rose syrup
- 1.5 cup milk
- 1.5 cup cream thickened full cream, min. 35% fat.
- ½ cup tutti frutti
Instructions
- Mash the paneer or cottage cheese with a spoon.
- Mix 2 tbsp. milk and 3 tbsp. custard powder/tapioca with paneer.Whisk well to ensure the mix is smooth. Keep it aside
- In a pan, take milk and add cream,rose syrup/ Roohafza,sugar to it.
- Let it come to a boil on a slow flame.Turn off the heat once it has come to a boil
- Now, turn off the heat..Add the paneer slurry to the pan. Whisk continuously and let it come to a boil,turn off the heat
- Move it to a bowl with an ice bath(Fill a bigger bowl with ice & water, keep the second bowl with ice-cream mix on top of it) so that it starts getting back to room temperature.
- Once cool, chill it in the refrigerator for 1 hour. (Optionally, you may add natural food colour, if you want a stronger pink colour
- Transfer the chilled ice-cream base to a container and cover it with a baking sheet. Chill it in a freezer for 1 hour.
- Whip it with a hand blender for few seconds,transfer to a metal bowl ,cover with baking sheet and allow to freeze.Chill it in a freezer for 1 hours or until it has started to set.
- Using a hand blender, blend the ice-cream again ,allow to freeze, repeat the same after 1 hour(optional)
- Add tutti fruitt to this container,mix with a spoon,cover and allow to freeze untill set.
- For best results,freeze the ice-cream overnight or 4-6 hours.

For best results,freeze the ice cream container overnight or 4-6 hours in an airtight container. Cover with a plastic wrap optionally. Also ensure that the temperature of the freezer should not be the coldest, keep it a level 1 or 2 less.This will allow the ice-cream to be scooped easily else it will be too hard.
Best tutti fruity ice-cream recipe is definitely homemade whether you make it this way or with ice cream maker!
Substitution & variations
- You can also use vanilla ice cream as an ice cream base and add a cup of tutti frutti along with some rose essence and 2 teaspoons vanilla extract. Use an electric beater to beat the ice cream fruit mixture until you get soft peaks. Store it in a freezer safe container and let it freeze for 6-8 hours or until next day. Use the same technique for this ice cream mixture as our easy paan ice cream.
- You can get fruit peels and tutti i frutti from indian grocery stores or make your own in dehydrator from fresh fruits.
- You can even add chopped dry fruits or nuts of your choice to this ice cream. Different fruits like chopped berries can also be added next time as a variation.
Storage
Always store the ice cream container in the airtight container in your freezer. If you like occasionally, enjoy a milkshake.Tutti fruiti bits can be refrigerated once opened.You can also leave them at room temperature if you live in a cold country. Always best to refer to packet instructions.
