    Badam Katli

    My heart says India is a land of festivals. Festive season starts with Makar Sankranti in the calendar year. Followed by Mahashivratri and Holi. Then comes Navratre, Ramnavmi in April and then Akshaya tritiya. Later comes sawan in July -Aug. Shravan Purnima, Varalakshmi vrat & Rakhi. Teej , Janamashtami, Gowri puja, Ganesh Chaturthi, Dussehra, Diwali & Karwa chauth. The whole year is lined up with festivals. What is life without a celebration? Sweets like badam katli or badam burfi, kaju katli , anjeer roll rule the roost in most sweet shops due to this high demand on festivals.

    Did you know, you can easily make them at home? Once you start making it at home you will always find store bought almond burfi has lesser nuts and more sweetness.

    Most sweet shops are famous for their fudge. However, what do you do when you don't have sweet shop nearby. People of all ages love diamond shaped pieces of dry fruit paste. Make this easy badam burfi at home, a day earlier to any party. All you need is almonds. It is also healthier than cake.

    Ingredients

    • Badam/ almonds soaked & peeled
    • Water
    • Ghee
    • Milk
    • Sugar
    • chopped almonds for garnish (optional)

    Equipment

    • Mixer grinder
    • Non stick pan

    Instructions

    Here are the step wise instructions for almond burfi recipe.

    1. Soak almonds for 4-6 hours and remove the skin.

    2. Grind them with water in a blender

    3. Heat ghee in a pan and add the almond paste to it. Mix well with a spatula.

    4. Add milk and mix well.

    5. Now add sugar to it.

    6. Keep stirring with a spatula until it gets halwa consistency.

    7. Cook for few more minutes until it starts to dry and you get some dry patches and the mixture starts to resemble kneaded dough.

    8. Line a tray with baking sheet or parchment paper. Alternatively, you can add some ghee to a tray if you do not have baking sheet. Level the mixture and garnish it with chopped almonds.

    9. Cut into diagonal shape with help of knife or pizza cutter.

    10. Refrigerate for 4-5 hours. Serve at room temperature.

    Substitutions

    You can make this burfi recipe with any nuts you like. Badam pista kaju or akhrot. Just decorate it with varq or some chopped almonds. You can also use just saffron if you do not have edible silver varq at home. I bet this recipe will rule the roost. You can also add cardamom powder to badam barfi if you like.

    Variations

    You can also flatten the fudge made, by pressing with a rolling pin over parchment paper. Later make incisions with a knife. Another way of making this fudge is by using blanched almond flour or almond meal with sugar syrup. However, I am yet to perfect that badam burfi recipe. Will update once I make it.

    Another way of making it is by using condensed milk and adjust sweetness according to your taste.

    • 2 cup badam/ almonds soaked & peeled
    • 1-¾ cup water
    • ¼ cup ghee
    • 2 tablespoon milk
    • 1-¾ cup sugar
    • chopped almonds for garnish

    Instructions

    • Soak almonds for 4-6 hours and remove the skin.
    • Grind them by adding water slowly, in a blender.
    • Heat ghee in a pan and add the badam paste to it.
    • Mix well with a spatula.
    • Add 2 tablespoon milk and keep stirring until it gets cooked.
    • Now add sugar to it. Keep stirring with a spatula until it gets halwa consistency.
    • Cook for few more minutes until it starts to dry and you get some dry patches and the mixture starts to resemble kneaded dough.
    • Line a tray with baking sheet. Alternatively, you can add some ghee to a tray if you do not have baking sheet.
    • Cut into diagonal shape with help of knife or pizza cutter.
    • Refrigerate for 4-5 hours.

    Notes

    Note: If sugar is less, the mixture will turn out as badam halva,which is as tasty as the sweet as well.In case you want more hard barfi you can add more sugar to the mixture and cook again.
    If you cannot soak the almonds overnight,make sure you soak them for 2-3 hours in hot water so that skin can be removed easily .

    FAQ

    Is fudge supposed to be soft or hard?

    It should be firm and you should be able to pick it up without deforming. Once you press it should get an indentation.

      Lovely recipe, though it does not mention at what stage saffron is to be added

        Thank you.Saffron is optional.You may or may not add it.Saffron strands soaked in milk is added along with sugar.
