    Kaju Katli Sandwich in air fryer

    Kaju katli is a dessert which is synonymous with Diwali. You can never get enough of it. Another great recipe is anjeer roll. Here is a kaju katli sandwich recipe which combines the two and helps you make a show stopper just like Diwali ke patakhe. Learn to make this easy recipe in simple steps. The only reaction you hear after this is WOW!

    We have used airfryer to cook the kaju base as this allows to cook the mix evenly and at low heat with less milk. Cooking on a pan requires more milk to cook, hence you need to cook the mixture for a longer time and keep an eye out. With an airfryer, it becomes quite easy to cook.

    Diwali is a time to pray and later gorge on desserts. Whether its chocolate barfi or kalakand (bhugal mawa). Sindhi lai ( puffed chana dal chikki) or varo (dry fruit chikki). Khorak or Jalebi.     How to make Sandwich kaju katli? ( video recipe)

    Ingredients

    For the base:

    • cashews - Use raw cashews
    • sugar - Use white sugar to retain the color of the cashews, you can use raw sugar. Powdered sugar is easy to cook with cashew base.
    • ghee - You can use coconut oil if you wan to make this vegan
    • milk - If you are using an airfryer, then you need very less milk, else for cooking in the pan you will need little more milk.

    For the stuffing:

    • mixed nuts (almonds, pistachios, walnuts)
    • gulkand (rose petal preserve)
    • dates, pitted - Use soft dates

    Kaju katli sandwich recipe

    Equipment

    • baking sheet / parchment paper
    • baking tray
    • Food processor
    • pan

    Ingredients

    For the cashew base:

    • 2 cups cashews
    • ¾ cup sugar use powdered sugar
    • 1 tablespoon ghee
    • ¼ cup milk

    For the Stuffing:

    • ½ cup mixed nuts almonds, pistachios, walnuts
    • ¼ tablespoon gulkand rose petal preserve
    • ¼ cup dates pitted

    Instructions

    To make the cashew paste base:

    • Coarsely grind the cashewnuts in a food processor until they reach a fine, powder-like texture. Be careful not to over-grind, or it may release oil and become pasty.
    • In a food processor, combine the mixed nuts, gulkand and dates. Pulse until the ingredients come together into a sticky, slightly chunky paste.
    • Set the airfryer to 160C|320F and place the cashew mix with milk and ghee in an oven safe tray/pan.
    • Cook the mixture for 8-10 minutes, stirring 1-2 times in between.
    • Place the mix on a parchment-lined tray. Spread it evenly and allow it to cool for 1 hour to firm.

    To make stuffing and assemble sandwich

    • Process nuts, gulkand, and dates together.Pulse until sticky paste forms.
    • If the mixture has too much moisture (wet), then you can cook it in airfryer for 6-7 minutes @160C|320 F, else you can use it directly.
    • Evenly spread the stuffing mix on half of the cooled kaju base.Fold the kaju base over the stuffing. Press gently to seal the layers.
    • Chill the tray for 1-2 hours. garnish with edible silver foil,cut into pieces and enjoy

    Step by step instructions

    How to make the kaju katli base ?

    1. Grind cashewnuts to a fine, powder-like texture. Don’t over-grind, as it will turn oily and pasty.Add sugar to the powdered cashews and combine them in food processor/

    2. Preheat the airfryer at 160C|320F ,add the cashew mix with milk and ghee in a oven safe tray/pan.

    3. Cook this mix for 8-10 minutes, mix 1-2 times in between.

    4. Place the mix on a parchment-lined tray. Spread it evenly with a rolling pin. Allow it to cool for 1 hour to firm.

    How to make the stuffing and assemble the kaju katli sandwich?

    5. In a food processor, combine all the nuts, gulkand, and dates. Pulse until all the ingredients come together into a sticky, slightly chunky paste.

    6. If the mixture has too much moisture (wet), then you can cook it in airfryer(optional) for 6-7 minutes @170C |340F, else you can use it directly ,else you can use the mixture straightaway.

    7.Once the kaju katli base has cooled, spread the nut and gulkand stuffing mix evenly over half of the kaju base.

    8. Fold the other half of the kaju base over the stuffing. Press it gently to seal the layers together.

    9.Place the tray in the refrigerator for at least 1-2 hours. This ensures kaju katli sandwich to set and firm.Once set, cut the kaju katli sandwich into desired shapes and serve! You can garnish with silver sheets

    Variatons and substitutions

    If you do not want to use an airfryer, you can use a pan to cook the cashew base.

    Heat the ghee in a pan over medium heat. Combine the cashew-sugar mixture and milk. Stir it constantly to prevent sticking.Stir until the cashew mixture thickens and becomes dough-like. It should pull away from the sides of the pan.
