    Aloo bhindi recipe, is a delicious dry curry. It is made with a delightful combination of potatoes and okra. This Indian dry curry is adored by many as it serves as an ideal accompaniment to a variety of Indian lentils. Most of us 90s kids have been fortunate that our mums have cooked so well.

    Not only is this stir fry an easy recipe to prepare, but it also serves as a nutritious and flavorful addition to your lunch box. Aloo bhindi, is a dish loved by many households, is made even more delightful by the harmonious blend of vibrant flavors from the following spices. Air fryer bhindi aloo is an easy recipe. You can eat it with vegan naan or as a wrap.

    Ingredients

    In order to make the delicious aloo bhindi sabzi, there are a few ingredients that you will need. It includes

    • fresh ladies finger (okra),
    • potatoes
    • a variety of aromatic spices - You can use turmeric powder, red chili, coriander powder, and garam masala.
    • If you do not own too many masalas, just use chaat masala and some curry powder.

    Step by step instructions

    To prevent the okra from becoming sticky, thoroughly wash and dry it. For best results, use a sharp knife in order to easily and precisely cut the okra into bite-sized pieces. In a similar manner, you should peel the potatoes first and then proceed to chop them into small cubes.

    • Begin by tossing the bhindi and aloo in oil and add to a preheated air fryer basket. Its advisable to cook in air fryer on low heat to ensure thorough cooking.
    • In a preheated air fryer (@ 160C|320F for 5 minutes ), cook the vegetables for 10-11 minutes.

    • Once the vegatables are partially cooked, toss onion with oil. Add it to the basket,continue to cook for 10-11 minutes.

    Add the spices and toss again in a bowl. Continue to cook for 7-8 minutes. Check if the potatoes are cooked. If not cook for 2-3 minutes more.

    • Air fryer

    Ingredients

    • 500 gm okra use fresh bhindi or frozen bhindi.
    • 250 gm potatoes chopped
    • 2-3 tbsp. vegetable oil
    • 1 medium onion red onion or white onion,optional
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala powder optional
    • ¼ teaspoon turmeric powder / curry powder optional
    • ½ tbsp. red chilli powder /paprika
    • salt as per taste

    Optional ingredients for variations

    • 1 tbsp. ginger-garlic- green chilli chopped,optional
    • 1 teaspoon dry mango powder amchur

    Instructions

    • Wash and dry the fresh okra. Cut it down in small pieces. Toss the okra and potatoes with 2 tablespoon oil.
    • Preheat the air fryer for 5 mins at 160 deg C | 320 deg F and place the okra and potatoes in the air fryer basket Air fry it for 10-11 mins at 160 deg C | 320 deg F
    • Once the vegatables are partially cooked,Toss onion with oil and it to the basket,continue to cook for 10-11 minutes.
    • Add the spices ,toss again in a bowl and continue to cook for 7-8 minutes.Check if the potatoes are cook, if not cook for 2-3 minutes. Total cook time of 27-28 minutes @160C|320F
    • Serve hot with jeera rice or roti.

    Notes

    A simple variation is to cook bhindi with just spices with onion/ginger/garlic.
    You need to add the onion,ginger,garlic with the spices to semi fried okra and cook in the airfryer.
    You may use a cooking spray instead of tossing in oil.

    Variations

    If you prefer a spicier aloo bhindi fry, you can achieve that by adding more green chilies. You may also increase the quantity of red chili powder. If you have a preference for a tangy taste, you can enhance it by incorporating additional dry mango powder ( amchur) or lime juice.
