You can use turmeric powder, red chili, coriander powder, and garam masala. If you do not own too many masalas, just use chaat masala and some curry powder.
Instructions
To prevent the okra from becoming sticky, thoroughly wash and dry it. For best results, use a sharp knife in order to easily and precisely cut the okra into bite-sized pieces. In a similar manner, you should peel the potatoes first and then proceed to chop them into small cubes.
- Begin by tossing the bhindi and aloo in oil and add to a preheated air fryer basket. Its advisable to cook in air fryer on low heat to ensure thorough cooking.
- In a preheated air fryer (@ 160C|320F for 5 minutes ), cook the vegetables for 10-11 minutes.
- Once the vegatables are partially cooked, toss onion with oil. Add it to the basket,continue to cook for 10-11 minutes.
Add the spices and toss again in a bowl. Continue to cook for 7-8 minutes. Check if the potatoes are cooked. If not cook for 2-3 minutes more.
Variations
If you prefer a spicier aloo bhindi fry, you can achieve that by adding more green chilies. You may also increase the quantity of red chili powder. If you have a preference for a tangy taste, you can enhance it by incorporating additional dry mango powder ( amchur) or lime juice.

- 2-3 tbsp. vegetable oil
- 1 medium onion red onion or white onion,optional

- 1 teaspoon garam masala powder optional
- ¼ teaspoon turmeric powder / curry powder optional
- ½ tbsp. red chilli powder /paprika
- salt as per taste

- 1 teaspoon dry mango powder amchur

- Wash and dry the fresh okra. Cut it down in small pieces. Toss the okra and potatoes with 2 tablespoon oil.
- Preheat the air fryer for 5 mins at 160 deg C | 320 deg F and place the okra and potatoes in the air fryer basket Air fry it for 10-11 mins at 160 deg C | 320 deg F
- Once the vegatables are partially cooked,Toss onion with oil and it to the basket,continue to cook for 10-11 minutes.
- Add the spices ,toss again in a bowl and continue to cook for 7-8 minutes.Check if the potatoes are cook, if not cook for 2-3 minutes. Total cook time of 27-28 minutes @160C|320F
- Serve hot with jeera rice or roti.
