Bombay potatoes or Bombay aloo is an easy version of traditional jeera aloo. This Indian potato fry recipe is crispy and delicious. Actually aloo fry forms a base of many curries where other veggies are mixed with potatoes once they are cooked. Beans, okra, aubergine,peas, fenugreek and peppers. Instructions
Follow the below instructions to make aloo fry in air fryer .
- Peel and cut the potatoes in cubes,Soak them in cold water for 3-4 hours.You may use them directly without soaking, Soaking helps to get more crispier potatoes.
- Drain the water from the potatoes.
- Toss the potato pieces with 1 tablespoon oil (no ,salt/seasoning now)
- Preheat the air fryer at 190 deg C for 5 mins. Place them in the tray in a single layer in the preheated air fryer.
- Air fry the potato cubes at 190 deg C for 12-13 mins, stirring once/twice in between using a spatula.
- Make the seasoning mix in a bowl with 1 tbsp. oil.
- Add the potatoes to the bowl.
- Toss the potatoes in it.
- Place them in the air fryer basket in a single layer. Continue to cook at 190 deg C for 8-10 minutes or until you get the desired crispness(optionally spray oil once between the cook)
- Serve immediately.
Variation
There are many ways of making this Indian potato recipe. Traditionally, it is made in a skillet. You can add any tempering to this potato fry Indian recipe. You may use mustard seeds while others use both cumin and mustard. Some people make it with boiled potatoes and they fry them with little oil in a skillet.
