Bombay potatoes or Bombay aloo is an easy version of traditional jeera aloo. This Indian potato fry recipe is crispy and delicious. Actually aloo fry forms a base of many curries where other veggies are mixed with potatoes once they are cooked. Beans, okra, aubergine,peas, fenugreek and peppers. - potatoes -You can use any kind of potatoes for this Bombay aloo recipe. Red potatoes, Yukon Gold potatoes, King Edward, Russet and Sebago all taste good. You can also make it with baby potatoes.
- oil -I prefer using avocado oil or rice bran oil. Use an oil with high smoking point, sesame oil, macadamia oil are good other options.
- cumin seeds
- coriander powder
- turmeric powder- You can also use curry powder if you do not have turmeric powder handy.
- garam masala powder
- paprika or red chilli powder
- salt as per taste.

Ingredients
- ½ kg potatoes peeled and cubed
- 2-3 tbsp. olive oil / vegetable oil
- 1 tbsp. cumin seeds
- ¼ teaspoon Turmeric powder
- ½ teaspoon garam masala powder
- ½ teaspoon red chili powder
- Salt as per taste
Instructions
- Cube the potatoes and soak them in cold water for 3-4 hours. Soaking is optional, but it helps make the potatoes crispier.
- Remove the water from the potatoes.Coat the potato pieces with 1 tablespoon of oil (no salt or seasoning yet).
- Set the air fryer to 190 deg C and let it preheat for 5 minutes. Arrange them in the preheated air fryer tray in a single layer.
- Cook the potato cubes in an air fryer at 190 deg C for 12-13 mins, stirring occasionally with a spatula.
- Combine the seasoning mix in a bowl using 1 tbsp. oil.
- Put the potatoes in the bowl. Coat the potatoes with it.
- Cook for 8-10 minutes at 190 deg C or until desired crispness is achieved. (If desired, apply a light coat of oil during cooking.)
- Serve immediately with basmati rice or naan bread.

- Peel and cut the potatoes in cubes,Soak them in cold water for 3-4 hours.You may use them directly without soaking, Soaking helps to get more crispier potatoes.

Variation
There are many ways of making this Indian potato recipe. Traditionally, it is made in a skillet. You can add any tempering to this potato fry Indian recipe. You may use mustard seeds while others use both cumin and mustard. Some people make it with boiled potatoes and they fry them with little oil in a skillet. Others like to add minced garlic and dried mango powder to the curry. Some even like to add onions and tomatoes to it. That is the versatility Indian cuisine offers.
If you do not have many Indian spices use a medley of curry powder, garlic powder, onion powder. Add a dash of fresh lemon juice instead of dry mango powder. Season it with black pepper if you do not have red chili powder at home.
