You should just be ready to approach food with an open mind. Here is an interesting recipe of zucchini boats which can be made vegan or vegetarian as per your choice.

Zucchini is so versatile. Best part you do not have to peel them. Just take a bite to check if they are bitter. If it is sweet you are good to go. Bake it in bread, make a taco, add it to pizzas. Make an easy weeknight curry and even juice it. I love making fritters and dumplings, substituting it for bottle gourd at times. Wrap it around asparagus and air fry them or just have a zoodle Bolognese.

Ingredients

  • zucchini
  • Olive oil
  • Cheese
  • Salt & pepper

Instructions

  • Slice the zucchini in halves, length-wise.

  • Scoop the flesh with a spoon so that there is space to add the salad. Brush it with oil.

  • Preheat the air fryer at 180 deg C| 350 deg F for 10 mins and place the zucchini boats in a single layer without overlap.

  • Air fry the zucchini boats for 6-7 mins at 180 C| 350 F.

  • Add the bean salad to the boats. You may optionally add grated cheese on it. Air fry them for 3-4 mins at 180 C| 350 F if adding cheese

  • Serve them immediately or warm.

Ingredients

  • 2 zucchini large
  • 2 tbsp. olive oil or any vegetable oil

  • ½ medium onion chopped
  • 1 medium tomato chopped
  • Salt & pepper as per taste
  • 1 tablespoon coriander optional
  • ½ cup shredded cheese (cheddar/gouda) optional
