Nothing better than crispy hot stuffed potato skins loaded with a filling of you choice. It gives a great flavor to spud. My mouth is watering as I write about it!
Using airfryer made my snacks easy. They are a perfect party recipe. Air fried potatoes actually appeals to all. Whether young and old. Picky eaters also love them. Add a different seasoning and a filling you like. Find your favorite flavor.They are like taco shells and bonus gluten-free. I love making fingerling fries , frozen fries and hash browns too. It is just something you can enjoy with family and get kitchen duties done in a jiffy!

Which variety of potato do I choose ?
Choosing the correct variety of potato is the most important step in this recipe.The varieties that work well include the following.
- Russet
- Yukon Gold
- Kind Edward
- Royal Dutch cream
- Royal blue / Purple
Depending on where you live, you will find one vareity or other.) I have tried with Russet,King edward,Dutch cream,Royal blue and all of them were good .The best result was with Russet and Kind edward potatoes.I haven't tried Yukon gold, but I hear good reviews for that .
How to make potato skins in air fryer ?
- Wash and dry potatoes.
- Pinch the potatoes with the fork atleast for a 1cm.
- Brush oil and salt on potatoes,season with salt.
- Preheat the air fryer at 200 deg C | 390 F for 10 mins. Place them in the tray in a single layer in the preheated air fryer. You may need to cook them in batches depending on your basket size.
- Air fry them at 200 C |390 F for 35-40 mins.Apply oil once and flip midway i.e. after 20 minutes.
- To check if they are done, insert a toothpick and check if it can pierce through.Smaller potatoes will cook faster than bigger potatoes.
- Allow the potatoes to cool for some time (around 30 minutes),slice the potatoes in halves.
- Using a spoon, scoop the potato flesh out, leave a good 1cm thick skin
- Drizzle olive oil all around the potatoes,use a pastry brush to spread the oil evenly
Air fry the potato skins in a pre heated air fryer at 200C/390F for 15 minutes
Brush oil once in between the cook to get these crispy potato skins
- Toss canned beans with onion,tomato,coriander leaves,lemon juice and salt.
- Fill the potato skins with bean salad and optionally add shredded cheese and cook in air fryer for 2-3 minutes (Optional step, adding cheese will make this recipe non-vegan)
- Serve warm
Variation
Add any seasoning as per you taste. Peri -peri , garam masala, curry powder or cajun. You can also make a vegan version by using nutritional yeast and cashew sour cream instead of cheese. Instead of grating cheddar cheese, you can also use blue cheese. You can also make baked ptoato bar in this fashion where we do not scoop the whole potato mash out. Leave some in and add toppings too. Extra tasty!
How to make frozen potato skins in the air fryer?
The skins (shells) can be frozen and used later. Cook them for 7-9 minutes at 200C |390F in a preheated air fryer.air fryer frozen potato skins help you if guests come suddenly.
Substitution
You can substitute the filling of air fryer potatoe skins with just cheese or your favorite salad while making air fryer red skin potatoes.

- 1 medium tomato chopped
- ¼ cup Coriander leaves to garnish
- Salt as per taste
- 1 teaspoon Lemon juice as per taste

Storage
Store them in refrigerator in 3-4 days. Air fry for 2 mins before you serve.

I prefer using Russet,Yukon Gold or King Edward for this airfryer potato skins recipe. Apart from these, Royal blue & purple are other varieties that go well.
