Veg fried rice is a recipe you can never get over with. There are multiple variations. Easy to cook and fast too. Simple wok and loads of veggies. You can never go wrong with this. Every one loves a good rice bowl. Fresh rice loaded with veggies is a perfect choice when you want something tasty which is also healthy. Another good variation is Chinese broccoli fried rice along with turmeric. This turmeric fried rice is easy to make even with left over rice.
Easy way to feed your kids veggies without much hassle. What else can you ask for. If you do not have time for veg Manchurian, pair it with dal fry. It might look like an odd combination, but it just works! You can also have it with some easy minestrone soup for cold wintry nights.

Benefits of broccoli
- Broccoli is a cruciferous vegetable and is rich in calcium.

Equipment
- wok / deep sauce pan
Ingredients
- Cooked rice / left over rice (Boil white rice(with quinoa if you like) with double the water and strain it once its cooked.)
- Oil
- Salt
Other ingredients
- Garlic chives or garlic cloves
- Broccoli florets
- Turmeric powder
Instructions
- Heat oil in a wok on a medium/high flame & add broccoli to it.
- Cover and cook for few minutes
- Take off the lid once the broccoli is cooked. I like to keep it crunchy so do not cook it completely.
- Now add cooked rice with garlic chives, turmeric powder and salt.
- Mix the ingredients in the wok, turn off the heat after few minutes.
Variation
- You can add spring onions instead of garlic chives. You may use garlic cloves instead of garlic chives. Another variation is broccoli fried rice Indian style or broccoli pulao where you can use garam masala. Add other whole spices like mace, black and green pepper, cloves, bay leaves in tempering.
Storage
- Fried rice stays well for 1-2 days in refrigerator. You can always chop veggies and keep them separate in an air tight box. Make the rice and add them instantly or add it to left over rice in a wok for an instant pilaf.
FAQ
Any long grain rice like basmati or jasmine is good for fried rice. Shorter grain rice has more water content so you need to avoid it. They tend to get sticky post cooking.
Any vegetable oil like peanut or sunflower is good.

- 4 cups cooked rice and quinoa I mix quinoa with white rice
- 2 tablespoon oil sesame oil or any vegetable oil
- 2 cup Broccoli florets
- ½ cup garlic chives chopped,else use garlic cloves (2-3)if you like.

- Always reheat left over food.
- If it tastes rancid or smells different, discard.
- Keep the kitchen ventilated when cooking at high temperature.
