Instructions
Wash well and remove the strings of the flat beans and chop them.
Boil water in a medium saucepan. Soak the green beans for 10 minutes and drain the excess water.
Heat oil in a pan and saute garlic. Add onions and let it sweat.
Add beans with little salt.
Cover and cook for 5-7 mins.
Once done ,add chopped tomatoes with pepper, cover and cook for 5-7 minutes.
Turn off the heat. Optionally add a teaspoon of lemon juice on top , for a dose of vitamin C. Serve warm with a crusty baguette.
Hint: Drizzle some goat cheese or parmesan cheese on top instead of lemon zest if non vegan.

- You can cook French haricots verts and yellow wax beans in a similar fashion as they belong to the same family. If you do not have fresh romano beans you can use canned green beans or grab a packet of italian flat green beans from the frozen section next time from the supermarket.

Variations
- Spicy - add red pepper flakes while cooking to imbue heat into the dish, or paprika for the smoked sweet flavor.
