However, living abroad introduced me to Mexican salads and bean buritto bowls. They are easy to cook and are loaded with proteins. What are the benefits of cannellini beans?

- onion medium
- white beans soaked for 4 hrs.
- garlic
- oil
- carrot
- warm water
- vegan stock powder
- Salt as per taste

How to make cannellini beans soup?
- Wash and soak beans in water for 4 hours or overnight.
- Heat oil in a saucepan & add onion and garlic with little salt. Mix well with a spatula.
- Once onions turn translucent, add carrots & salt let it soften.
- Add white beans along with warm water & stock powder.
- Cover and cook for 20-25 mins or until they are soft.
- Add 1 cup celery to it and let it simmer for 10 mins.
- Add lime juice before serving, Serve hot with toasted bread.
Variations
You can adjust the spices according to your taste.
You can use beans and pasta to make an easy minestrone soup recipe.
You can make a curry base that includes onions,tomatoes,curry powder and paprika and then use the beans and vegetables to make this soup.
Substitutions
You may use any bean to make this soup like broadbeans, pintobeans etc. You can also make it with canned . Just run the through water in a sieve, before you use the canned ones.
