Indian mango lassi is a drink which makes every summer awesome!
No matter where you go, this drink will be around whenever you see Indian cuisine served. Everyone is crazy about this Indian mango drink whether you stay in India or abroad. So, how do you make a good restaurant style mango lassi at home?
What is mango lassi made of?
Mango pulp, yogurt and sugar.
First of all you need sweet mangoes. They come in many varieties. Some are pulpy others tart. Which is your favorite variety? I have always loved eating mangoes because we had 5 huge trees at home. Whole summer in township, people would send loads of mangoes to each other.
Plucking mangoes from neighbor's garden at Bhopal when we went to our grandpa's house was our favorite pastime. (Of course, we took permission first!). There was no cable tv no internet then. Just the summer heat and some dessert coolers to give us company. Post lunch all of us would enjoy this small adventure. I am sure plucking brings back memories to you readers too.
North has its own favorites. Langra, chausa, dashehri,neelum, pairi and totapari. What is not to love! . We like to prepare this during Holi as we get mangoes in March here in Australia. Indian railways and mango love
Some feel Alphonso mangoes are best. However, I fell in love with Gujarati kesar at Bhavnagar. My favorite memory of summer train travel also has mangoes in it. A vendor selling aam papad or mango papad would enter as soon as train entered Rajmundry.
Later, as the train entered Vijayawada, numerous carts of mangoes would show up on the station. The sight would improve our mood instantly even after 6-8 hours of travel depending how late the train was. It still brings a smile to me 🙂
Initially, we missed mangoes when we moved to Australia. Now Kensington Pride steals my heart here in Melbourne. So here is a traditional mango lassi recipe with mango pulp, videsi. While I use Calypso for my salsa, somedays when you are lucky you do get chausa in Queen Vic market for lassi. Grown in Queensland yet totally desi feeling!

Which mangoes to use for mango lassi drink?
Use the sweetest variety of fruit to make your delicious mango lassi. Here in Australia , we prefer using 'Kensington Pride' when I don't get chousa aam. You can always choose to frozen mangoes from the supermarket freezer or use canned mangoes if you are not using fresh mangoes. Tinned mangoes are preserved in sugar syrup hence they came loaded with that extra sugar. You can scoop the pulp and blend it with some water in a blender. If the mango is less sweet, add your choice of sweetener. Alphonso mango lassi can be made using canned alphonso pulp even when not in season.

- Low fat yogurt
- Cardamom powder/sugar/ Chopped nuts/rose petals for garnish (optional)
I prefer just using mangoes with low fat yogurt, however there are multiple variations with the above listed ingredients.

- Scoop the mango flesh from ripe and sweet mangoes. Freeze them for few hours.
Top tip: When mangoes are cheap, freeze your mango pulp in an ice cube tray. Use it to make your favorite ice cream and smoothies later.
- Add low fat yogurt into a blender
- Add the frozen mango pieces along with cardamom powder(optional).
- If your mango is not very sweet you may add extra sugar according to your taste.
- Blend until smooth.
- Pour it into glasses. Garnish with chopped nuts and rose petals optionally.
This recipe pairs well with a spicy jackfruit biryani and chana bhatura. You can always start your meal with a lassi and end with a mango kulfi or a kesar shrikhand if you love your mango recipes. Substitutions
If you do not have fresh fruit available, you can make mango lassi recipe with canned mango pulp. Adjust the yogurt added according to the sweetness of the pulp. You can also make a frozen mango lassi or a mango lassi popsicle for kids if they like ice cream more. If you are vegan, you can make vegan mango lassi recipe with coconut water ,pulp and bananas. Use some coconut yogurt or soy yogurt to make your dairy free mango lassi. Mango lassis are fabulous whatever your recipe may be. You can use plain Greek yogurt to make it along with sweetened mango pulp ,if you cannot set the curd at right consistency.
Variations
You can use yogurt to make various version of lassi drink recipe. Be it plain, cardamom lassi, kesar mango lassi, plain sweet lassi or salty lassi or rose lassi. You can also add some saffron to get a golden hue. You can also add some rolled oats to this, just add little water as oats will make this drink more thick. These days people even make strawberry or peach version. Keto mango lassi can be made using mango extract and you use a keto friendly sweetener like monk fruit instead of sugar along with low fat hung yogurt. Unfortunately, mangoes are not considered keto friendly but you can make a strawberry lassi instead.
