    Ingredients

    Here’s what you’ll need for this vegetarian delight:

    • firm tofu
    • broccoli , blanched in hot water
    • boiled and grated potatoes
    • salt,dried mint leaves
    • ginger
    • garam masala powder, red chilli powder / green chillies , cumin powder
    • oil spray

    Instructions

    Blanch broccoli for 10 minutes in hot water, drain well.

    Combine tofu,broccoli,dried mint leaves, ginger and optional spice powders (garam masala powder, red chilli powder / green chillies and salt) in a food processor.

    Add boiled potatoes. Portion out the mixture equally. Shape them into thick cutlets.

    brush with a little oil, and freeze for 4 hours or ovenight to help retain their shape.

    Air Fryer Method:

    • Preheat your air fryer to 180°C | 355°F for 5 mins.Place the cutlets in the basket and cook for 20–22 minutes, flipping halfway through.

    • Cook on medium heat until they turn golden brown and crisp.

    Deep Fry / Pan-fry Method (optional):

    • Heat oil and deep fry/pan-fry the patties until golden brown.

    Equipment

    • Air fryer
    • brush
    • baking tray

    Ingredients

    • 1 broccoli blanched, 400 gms
    • 200 gm tofu
    • 3 medium potatoes boiled and mashed, 300 gm
    • Oil spray

    Spices

    • 1 tablespoon ginger
    • 1 tbsp. dried mint leaves
    • ½ tablespoon salt
    • ½ tablespoon cumin powder
    • ½ tablespoon paprika / red chili powder
    • ½ tablespoon garam masala powder

    Instructions

    • Prepare the Mixture: Blanch broccoli for 10 minutes in hot water with salt, drain well.

    • Combine Ingredients: Mix in the tofu ,broccoli,dried mint leaves, ginger and optional spice powders (garam masala, red chilli powder / green chillies and salt) in a food processor, Add grated boiled potatoes to the mixture.
      3 medium potatoes, 1 tablespoon ginger, ½ tablespoon salt, 1 tbsp. dried mint leaves
    • Form the patties: Portion out the mixture equally. Shape them into thick cutlets.
    • Freeze for Better Texture: brush with a little oil, and freeze for 4 hours or ovenight to help retain their shape.
    • Air Frying: Preheat the air fryer to 180 C | 355 F for 5 mins. Place the patties in the air fryer basket.
    • Cook for 20-22 minutes, flipping halfway and brushing with oil again to ensure even browning.
    • Serving: Serve hot with lemon wedges, onion rings and coriander/mint chutney.
    • Storage: Store any leftover patties in an airtight container in the refrigerator for up to 3 days.

    • Swap potato with sweet potatoes or raw bananas for a unique twist. You can use both frozen or fresh for this recipe. you can also make this tikki with cauliflower as a variation you can make.
    • For a healthier version, opt for less oil shallow frying or air frying. easoned Cast iron pan can be used for shallow frying instead of a broad non-stick pan.
    • Add crumbled paneer for extra protein for a vegetarian version or with tofu for vegan option.
    • Adjust spices as per your preference — cumin powder or coriander powder, chaat masala powder are great additions.
    • You can even add grated carrots or beets for more fiber and color.
