    Aloo tikki in air fryer | Easy potato patties recipe

    Crispy aloo tikki or potato patties is a fabulous snack. One of the easiest and yummiest of Indian street food recipes. While the potato cakes or croquettes of the west use egg wash or egg whites. Indian version has bread crumbs or corn flour in it for crisp texture. These cutlets can be served with a dipping sauce or made into an elaborate meal too. We love serving easy veg cutlet recipe with chickpea curry as a chaat along with some chopped onions, tomatoes and lemon juice for a vegan snack or serve it with some yogurt on top for vegetarian version. This is commonly known as chole tikki. My mouth is watering as I mention it. It is my all time comfort food.

    You can also make a gluten-free aloo tikki chaat at home by using quinoa instead of bread crumbs. Read on for the recipe with a variation to make air fryer potato patties.

    Equipment

    • cast iron pan
    • or air fryer for low oil version
    • potato masher
    • food processor (optional)

    Ingredients for potato patties

    • Large potatoes boiled and peeled
    • Mint leaves chopped
    • Bread crumbs or 1 slice of bread or Buckwheat flour for gluten-free recipe
    • Dry mango powder / amchur powder (optional)
    • Green chilies finely chopped (as per taste)
    • Ginger finely chopped
    • Salt as per taste
    • Ghee / Coconut Oil / vegetable oil

    Why does my potato patties breaks while frying ?

    The reason that potato patties breaks or falls apart can be due to multiple reasons

    1. The quality of potatoes - starchy potatoes are best for this recipe as they are low in water and high in starch

    2. You need to rest the patties in the fridge or freezer so that they retain their shape while cooking

    3. Do not add too much of bread to the recipe, else it will break too.

    4. The potato mix should not be wet, for example, remove any excess water from the boiled potatoes.

    How to cook potato patties in air fryer ?

    Recently the air fryer has been very populer with home cooks. I consider the air fryer as just as optimized mini oven on fan forced mode. It does not use any other special technique, just cooks with lot of hot air in a small oven and hence the better results.

    To cook the aloo kotlet in air fryer ,freeze them in the freezer for few hours and transfer them to a pre heated air fryer and cook. These crispy air fryer tikkis can be stored in the freezer for days. Frozen aloo tikki can cooked in a preheated air fryer, whenever required. Refer below for steps.

    Instructions to make air fryer potato patties

    1. Mash the potatoes in a bowl. Add bread crumbs/buckwheat flour with ginger, chillies, salt and mint.

    2. Take a small amount of mix and shape them into round patties. Apply ghee/coconut oil on top of the patties

    3. Plate the patties/tikkis in a tray and place them into the freezer for 4-5 hours. You can cover them with a baking sheet or cling film if you want to store it for longer.

    4. Pre heat the airfryer at 190C/375F for 5 minutes. Place the frozen aloo tikki in air fryer basket. Cook at 190C/375F for 18-20 minutes in total. Use oil spray in between and flip them over.

    • Optionally use the grill option for 3-4 minutes to get crispy potato patties.

    Instructions: potato patties recipe (traditional shallow fry)

    1.Mix all dry ingredients.
    2.Take a small amount of mix and shape them into round patties.Apply ghee/coconut oil on top of the patties .Keep into the refrigerator 3-4 hours.

    3. Heat a pan on low flame,start cooking the patties in with oil/ghee.
    4. Cook on low flame, flip it slowly. Cook on both sides adding more oil/ghee during the cook.

    5. Serve golden brown potato tikkis with green coriander chutney.

    Ingredients

    • 3-4 large potatoes boiled and peeled
    • ¼ cup mint leaves chopped
    • ¼ cup bread crumbs or 1 slice of bread or 2 tablespoon buckwheat flour
    • 1 tablespoon dried mango powder optional
    • 2 green chillies finely chopped,use as per taste
    • 1 piece ginger finely chopped
    • Salt as per taste
    • 1 tablespoon coconut oil or ghee or any vegetable oil to coat the patties
    • Oil/ghee for frying

    Instructions

    • Mash the potatoes in a bowl.
    • Add bread crumbs with ginger,chillies,salt and mint.
    • Take a small amount of mix and shape them into round patties
    • Apply ghee/coconut oil on top of the patties,

    For cast iron (traditional frying method)

    • Keep the potato patties into the refrigerator 3-4 hours.
    • Heat oil/ghee in a pan,start cooking the patties in a batch of 2-3 patties.
    • Cook on low/medium flame until light brown on both sides adding more oil/ghee during the cook.

    For air fryer potato patties (low oil version)

    • Plate the patties/tikkis in a tray and place them into the freezer for 4-5 hours
    • Preheat the air fryer at 190C| 375F for 5 minutes
    • Place the frozen aloo tikki in a single layer in the air fryer basket. Cook at 190C/375F for 18-20 minutes in total. Use oil spray in between and flip them over.
    • Optionally use the grill option for 3-4 minutes to get crispy potato patties.
    • Serve these delicous patties hot with mint chutney or sweet tamarind chutney

    For cooking in oven

    • Preheat the oven for 10 minutes at 200C/390F.
    • Place the frozen patties into a tray in the oven. Cook at 200C/390F for 25 minutes in total, use oil spray/brush in between and flip them over.

    Keeping the raw patties in refrigerator/deep freezer will help them to retain their shape while cooking.
    For better results with air fryer version,freeze the patties and cook them directly.
    You may replace buckwheat flour with any other gluten free flour like quinoa flour.
    Addition of sweet potatoes will increase the nutritional value but will result in less crispier patties..
    You may replace bread crumbs with buckwheat flour to make this gluten free recipe
    While using ghee/coconut oil on these patties, you will need to cook with your exhaust ON to avoid those extra smoke/fumes in your kitchen.

    Store the aloo patties in freezer(for long term) or fridge(for a day) until cooked.

    Variations

    You can stuff cheese and corn and make mashed potato with cheese. You can also make a punjabi aloo tikki recipe by adding more spices like cumin powder, coriander powder and garam masala to the aloo patties. Add crumbled paneer to it and make a delicious protein rich aloo paneer tikki.

    Serving suggestion: You can serve this as aaloo tikki chaat with mint and date or tamarind chutney. Another way to serve this is aloo tikki burgers more commonly known as mc aloo tikki recipe by serving lettuce leaves, tomatoes, onions along with aloo tikki sliders.
