    Rajma Kebab recipe | Rajma Cutlet recipe

    Rajma or kidney beans is a staple diet of every North Indian. While most of us have grown up eating Rajma masala, there are more ways of eating it other than the curry.I love eating it as a patty or cutlet and also add boiled kidney beans to salad.

    I first remember having it on an airline menu which was curated by Chef Sanjeev Kapoor. It was an amazing cutlet served hot on my flight. Even though it was many years ago, I still remember the hearty breakfast served. Most of us love having aloo tikki in the form of chaat as a snack or light dinner as tikki chole. Making patties out of beans makes it rich in proteins too and you can avoid making a curry to serve with it. Just a soup would make a great meal on a cold winter night. I love making tikkis in air fryer be it raw banana cutlets, beetroot cutlet ,railway cutlets or buckwheat patties.

    Ingredients

    • kidney beans / rajma
    • potatoes
    • ginger
    • green chillies
    • cumin seeds
    • coriander powder
    • red chilli powder
    • amchur / dry mango powder
    • salt as per taste
    • ghee / oil if vegan

    Equipment

    • Air fryer or oven
    • Potato masher
    • Grater
    • Instant pot / pressure cooker

    Instructions

    1. Soak kidney beans for 3-4 hours after washing. Boil it in pressure cooker(2-3 whistles) . if they are 90% cooked that is also fine,Do not overcook time. The cooking time depends on the age of the rajma beans. 1.5 cup raw kidney beans will result in 3 cups of boiled rajma.

    2. Mash the rajma beans using potato masher.

    3. Add the boiled potatoes and mash it with a potato masher.

    4. In a pan, heat oil. Add ginger, chilies, cumin seeds along with coriander powder, red chilli powder or paprika and salt. Cook it for a couple of minutes.

    5. Now, add this spice mix with dry mango powder to the mashed potatoes and kidney beans mixture in a bowl.

    6. Mix well and mash it together.

    7. Make cutlets and apply ghee/oil on it. Put it on a baking tray. Freeze it for 4-6 hours.

    How to cook Rajma kebab in air fryer ?

    • Preheat the air fryer at 200 deg C for 10 mins.
    • Add the patties to the air fryer basket. Cook for 18 mins and apply oil once in between.
    • Flip over the patty and cook for 3-4 minutes after applying oil again

    Hint: You can make patties immediately also in air fryer. However, freezing it gives it a real crisp texture.

    How cook Rajma kebab on stovetop ?

    • Take a heavy cast iron pan/tava. Allow it to get hot on low heat. Cook the rajma tikki in little oil from both sides.

    Substitution

    This patty can be made with lobia or black eyed beans instead of rajma too or good old chickpeas if you do not have kidney beans at home.

    Variations

    You can also make a burger by serving the patty between buns of your choice. You can also make a wrap. Use tomato sauce or mayo along with pickled cucumbers, chopped cabbage, sliced onions and shredded carrots for a hearty meal.

    Storage

    You can freeze the patties in a tray and cover it with a cling film. Air fry directly.

    • 1 teaspoon cumin seeds
    • 1 tbsp. coriander powder
    • 2 teaspoon red chilli powder
    • 1 tbsp. dry mango powder amchur
    • Salt as per taste

    FAQs

    How long does rajma need to be soaked?

    Best soaked overnight or 6-7 hours. If you are in a rush, soak it in hot water for 3-4 hours.

    Does rajma leave Colour when soaked in water?

    yes it has a pinkish hue.

    Can we use water in which rajma is soaked?

    No. Its better to water your plants with it ,if you want to avoid wastage of water.
