It gives you a perfect end to the meal. If it is something which is made naturally even better. Vegan blueberry ice cream recipe is perfect for those with sweet tooth!
It took me a while to make a perfect blueberry vegan ice cream recipe. I love blueberries so first I used to make them with dairy and ice cream maker. Later, I made a version without it. Then as my tastes evolved, I made another one using stevia. Now, finally I have made a vegan one.
I am a vegetarian but I do like to eat vegan most of the times. One meal at a time, taking baby steps into veganism. First, I moved from using full cream milk to light one. Now, I love using homemade oat milk wherever I can be it coffee, desserts or make vegan smoothies. I am finally at peace, making dairy free sugar free ice cream recipe these days. I have battled a low thyroid, weight changes & mood swings all my life. Eating healthier by choice has made me happier too.
My favorite one these days is the Frozen strawberry dessert, PB vegan ice cream , guava ice cream and sometimes chocolate peanut butter ice cream.
Frozen or fresh?
I love the vibrant colors. Berries are just like bananas. Grab them and eat it fresh when at a farm. I end up eating blueberries on my way home fresh from the local vegetable market. They help me get an instant energy rush without relying on chocolate. They are great for anti-oxidants too. Also, the best anti aging remedy.
Best part about berries is they are full of flavor. Put it on your pavlova, cake or a simple smoothie and enjoy! Eggless blueberry cake works great with coffee and if you want a cold treat the recipe below will just be it.
You may use frozen or fresh blueberries to make this. Frozen berries are actually better they say. I love eating them fresh and storing some when they are in season. Storing them in food graded zip lock pouches helps me enjoy my smoothies even when they are not in season.
Ingredients
- Fresh blueberries, cooked and then frozen
- coconut milk( I have used coconut milk, you may use full fat coconut cream for a more creamier texture)
- vanilla extract
- Maple syrup - you can use this as per your taste
- Frozen bananas (this is optional, I like the the ones with just coconut milk and blueberries.)

Equipment
- Blender - I like using my vitamix blender for best results.
- ice-tray
- air-tight container
- cling film
Instructions
- Take fresh blue berries that are sweet as well.
- Mash them with a potato masher
- Start cooking them on low flame ,allowing to reduce
- Cook until it turns thick and of smooth consistency.allow it to cool down.
- Place the puree in an ice cube tray, covered with cling film. Allow it to freeze for 5-6 hours.
- In a blender , add the coconut milk ,vanilla extract.
- Add the frozen blue berry cubes
- Blend for few minutes until all ingredients have been crushed and mixed.
- Move the contents into a box to be frozen. Cover it with a cling film, allow it to freeze for 5-6 hours.
Do not keep your freezer to coldest setting as it will end up with very hard dessert. Also allow your dessert to rest for 5-10 minutes before trying to scoop.
Substitutions
You can make this recipe with any berry. Raspberry or strawberries, blackberry or cranberries. Enjoy the colors and flavors burst into your mouth. Mix and match to make your own combination. You can also use frozen berries to make this recipe.
Variations
There are many ways of making blueberry ice cream. You can make it eggless with just blueberries and milk You can also make ice cream without an ice cream maker too. Some people use eggs too.

Can I directly puree frozen blueberries, seive it and then add the frozen puree with the bananas?

Yes Cho, I have not tried that however once the berries are cooked, it won't matter whether they were fresh or frozen.
Also, if you need more creamier version, try swapping the lite coconut milk with full coconut milk.
