This delicious recipe was inspired by my banana walnut cake recipe which was eggless. However, it still contained dairy. As I try to incorporate veganism in my daily diet as much as possible. It was time to tweak air fryer muffins for the better. Unlike what most cooks feel, delicious muffins can be made vegan too.

Ingredients
- fresh bananas
- raw sugar
- chia meal / (powdered chia seeds) soaked in water (or egg if not vegan)
- hemp seed milk / oat milk / vegan milk (or dairy milk)
- Apple cider vinegar
- Vanilla extract
- sunflower oil / olive oil
- self raising flour
- chopped walnuts optional

Instructions
Preheat air fryer for 5 minutes at 150 deg C.
Mash the bananas in a bowl
In a large bowl, add chia seed mix, mashed bananas and sugar.
Add oil to the mix
Now, add milk to the mix along with vanilla extract.
Add self raising flour to the wet ingredients.
Add apple cider vinegar,Mix the ingredients slowly with a whisk
- Pour the muffin batter in muffin cups. Pour the muffin batter in muffin cups. Garnish with chopped walnuts
- Place in an air fryer basket. Air fry at 150 deg C / 300 degrees F for 15-17 mins. Check with toothpick once done or cook for few more mins until it comes clean.
Hint: Always preheat your air fryer like an oven. You must always remove any left over tidbits before usage for best results. If you find your cakes lopsided or uneven in an air fryer. You should rotate the muffin cups mid way as that is due to air flow.
Substitutions
- You can add flax seeds as an egg replacer for vegan option. Others can add egg if required. Generally mashed banana is a good egg replacer. Hence, you do not need egg in this recipe.
- You can substitute self raising all purpose flour with whole wheat flour.
- You can use paper muffin cases or muffin tin instead of ramekins however there are high chances that the batter will tip over in the plain paper cases. The other option is to use silicone muffin cases but I do not like that personally, hence I stick to paper cups or ramekins .
- You can also use brown sugar in place of raw sugar for air fryer banana bread muffins , however if you are vegan then avoid brown sugar or white sugar.
Variations
- You can garnish cake with walnuts, pecans, almonds or raisins. If you want to make nut-free muffins, you can add some tutti frutti or candied fruit or chocolate chips for garnish. Serve this easy recipe with ice cream for a delicious treat.

Storage
Store the banana muffin is an airtight container or a plastic wrap for 3-5 days. Always warm before you serve. You can also freeze them in a freezer bag.
Top tip
You can add few drops of vanilla extract or a teaspoon cinnamon powder or cocoa powder if you find banana flavor overpowering.
FAQ
You can replace ⅓ cup water and 1 tablespoon chia seed with 1 egg , if you are not vegan.
