Green bell pepper is an easy veggie. You can use it as a pizza topping or make a yummy veg jalfrezi with it. Serve it as pakoras. Make an air fryer stuffed peppers with a potato filling or just make some cheesy mini peppers for a super bowl. Another great recipe is air fryer potatoes peppers onions. It is an easy side dish. It can be eaten with roti or jeera rice. You can also use this as a filling for toasties and sandwiches. Ingredients
- cubed potatoes soaked in cold water -
- yellow onion / red onion
- green capsicums / green peppers
- oil
- seasoning of your choice or just use salt and pepper.

Steps to make air fryer breakfast potatoes with onions and peppers
Soak potatoes in cold water for couple of hours or atleast 20 mins.
Drain the water by passing them through a sieve.Toss the potatoes with oil.
In a preheated air fryer 190 deg C|375 deg F, place potatoes in the air fryer basket in a single layer.
Air fry the potatoes for 10 minutes at 190 degrees C |375 degrees F.
Toss onions and bell peppers in oil and seasoning and add it to air-fried potatoes in the basket.
Air fry them further for 8-9 minutes at 190C|375F.Total cooktime of 18-19 minutes.Serve warm.
Hint: Always preheat your air fryer for the best results.
Substitutions and variations
- You can even make a similar curry with sweet potatoes instead of potatoes. Use any peppers like red bell pepper, yellow bell pepper if you do not have green.
- You can also make this in a cast iron skillet.
- Use leftover potatoes as a yummy filling for your toast or sandwich ,with or without cheese. You may keep the skin top of the potatoes intact, before u chop them into ½ inch cubes. It adds flavor to crispy potatoes.

Ingredients
- 2 medium potatoes peeled,cubed
- 1 medium green pepper cubed
- 1 medium onion cubed
- 2 tablespoon oil
- salt and pepper as per taste
Instructions
- Let potatoes soak in cold water for a few hours or at least 20 minutes.
- Use a sieve to drain the water, then coat the potatoes with oil.
- Put the potatoes in a single layer in the air fryer basket at 190 deg C|375 deg F.
- Cook the potatoes in the air fryer for 10 minutes at 190C|375F.
- Combine onions and bell peppers with oil and seasoning, then add them to the potatoes in the basket.
- Cook them for an additional 8-9 minutes at 190 C|375 F in the air fryer.Serve while hot.
