How to make potatoes and carrots in air fryer ?
To make air fryer carrots and potatoes, start by washing and cutting the vegetables into evenly sized pieces. Then, place them in a single layer in the air fryer basket and lightly coat them with olive oil or cooking spray. Season with saltm If you want different flavors, later use any other desired seasonings such as rosemary or fresh thyme.
- Peel and chop the potatoes in cubes. Soak them in cold water for 30 minutes in a large bowl .Drain the water from the potatoes and carrots.Toss them with 2 tablespoon oil (no ,salt/seasoning now)
2. Preheat the air fryer at 190 deg C | 375 F for 5 mins. Place them in the tray in the preheated air fryer. Air fry them at 190 deg C | 375 F for 10 mins, stirring once/twice in between using a spatula.
3. Toss the carrot pieces with little oil
4. Toss the cooked potatoes with carrot pieces
5. Toss salt & pepper or any seasoning with potatoes and carrots.Continue to cook in the air fryer at 190C|375F for 8-9 minutes.
6. Serve warm.

Variation
Add any seasoning as per you taste. Peri -peri , garam masala, curry powder or cajun. You can even make a variation like air fryer roasted potatoes and onions. Potatoes celery carrots onions or roasted potatoes carrots onions and mushrooms
Substitution
You can substitute potatoes with sweet potatoes. I have even used baby potatoes for recipes if we didn't have Russet at home. The cook time may wary if you have used different type of potato. This will be slightly sweetish. You can also make this crispy air fried potatoes carrots by using baby carrots and baby potatoes instead of regular carrots and potatoes. You can also make this recipe with air fryer frozen carrots potatoes.
Storage
Store them in refrigerator in 3-4 days in an airtight container. Air fry for 2 -3 mins before you serve. You can freeze leftover air fryer potatoes and carrots in a freezer-safe container. Just air fry them again before you serve.
