    Air fryer Dahi ke kebab | crispy yogurt cutlet

    Dahi ke kebab are soft yogurt-based kebabs that melt in your mouth. They are slightly crisp outside, creamy inside. Traditionally shallow-fried, this air fryer version keeps them light and mess-free without losing the rich flavor.

    Finally, the wait is over and here is the delicious low oil recipe that uses the airfryer and avoids deep frying. I love making tikkis in air fryer be it raw banana cutlets, beetroot cutlet ,railway cutlets or buckwheat patties. This easy recipe with hung curd makes a yummy snack for teatime.     Ingredients

    • thick yogurt hung for 2 hrs around ¾ cup (full fat)
    • paneer , grated (if using homemade paneer, ensure that does not have excess moisture)
    • bread crumbs
    • red lentil flour
    • Oil for brushing
    • ginger, grated /finely chopped
    • mint
    •  garam masala powder
    • Salt as per taste ( I prefer black salt for extra flavor)
    • green chillies chopped

    Equipment

    • Air fryer
    • mixing bowl
    • muslin cloth
    • Grater
    • brush / oil spray

    Step-by-step instructions.

    Prepare the Kebab Mixture

    1. Place thick yogurt in a muslin cloth and hang it for 2-3 hours to drain excess water. Gently squeeze it a few times for firmer curd.

    • In a bowl, combine hung curd, grated paneer, breadcrumbs, salt, and spices. Mix well until the mixture feels soft but holds shape. Add extra breadcrumbs if it's sticky.

    Shape & Freeze

    • Shape the mixture into small round patties. Press them optionally.
    • Lightly brush with oil, place on a tray, and freeze for at least 4 hours (or overnight for best results).Freezing helps the kebabs hold their shape and crisp up evenly.

    Cook dahi ke kebab in air fryer

    • Preheat the air fryer to 180°C (355°F) for 5 minutes.
    • Line the basket with a perforated sheet and arrange frozen kebabs in a single layer.

    • Air fry at 180 deg C |355 deg F for 18-20 minutes, flipping halfway through and brushing with a little oil.

    • Once crispy and golden, serve hot with a green chutney like mint chutney or yogurt dip!

    Hint: You can make patties immediately also in air fryer. However, freezing it gives it a real crisp texture.

    Ingredients

    • 1.5 cup thick yogurt hung for 2 hrs ,results in ½ quantity
    • ¾ cup paneer , grated
    • ½ cup bread crumbs
    • ⅓ cup red lentil flour or chickpea flour (besan)
    • 1 tbsp. ginger
    • 1 tbsp. mint
    • 1 tbsp. garam masala powder
    • Salt as per taste Use black salt for extra flavor
    • 1-2 green chillies chopped,optional
    • 2 tablespoon Oil for brushing

    Instructions

    • Prepare Hung Curd:
    • Line a bowl with muslin cloth, add thick yogurt, and hang for 2-3 hours to drain water. Squeeze gently a few times for a firm curd.
    • Make Mixture:
    • In a bowl, mix hung curd, grated paneer, breadcrumbs, salt, and spices until it forms a soft dough. Add more breadcrumbs if the mix feels sticky.
    • Shape Patties:
    • Divide the mixture into equal portions, roll into balls, and flatten slightly into kebabs. Brush lightly with oil.
    • Freeze:
    • Place kebabs on a parchment-lined tray and freeze for at least 4 hours or overnight for best results.
    • Air Fry:
    • Preheat air fryer to 180°C (355°F) for 5 minutes. Line the basket with a perforated sheet and arrange kebabs in a single layer. Air fry for 18-20 minutes, flipping halfway and brushing with oil again.
    • Serve:
    • When crisp and golden, serve hot with mint chutney or yogurt dip.

    Substitution & Variations

    • This patty can be made vegan by using coconut yogurt along with tofu.
    • You can also make a burger by serving the patty between buns of your choice. You can also make a wrap.
    • Use tomato sauce or mayo along with pickled cucumbers, chopped cabbage, sliced onions and shredded carrots for a hearty meal.
    • Flavor Twist: Add mint, kasuri methi, or grated cheese for fusion flavors.

    Storage

    Freeze the shaped patties on a tray covered with cling film. Once firm, transfer them to a zip-lock bag for easier storage. They keep well in the freezer for up to 2-3 weeks. Air fry directly from frozen in a preheated air fryer whenever you wish to serve.

    Store any air-fried leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 180 °C (355 °F) for 3-4 minutes to bring back their crispness.
