- Place thick yogurt in a muslin cloth and hang it for 2-3 hours to drain excess water. Gently squeeze it a few times for firmer curd.

- In a bowl, combine hung curd, grated paneer, breadcrumbs, salt, and spices. Mix well until the mixture feels soft but holds shape. Add extra breadcrumbs if it's sticky.

Shape & Freeze
- Shape the mixture into small round patties. Press them optionally.
- Lightly brush with oil, place on a tray, and freeze for at least 4 hours (or overnight for best results).Freezing helps the kebabs hold their shape and crisp up evenly.
