    Broccoli fried rice | Turmeric fried rice

    Veg fried rice is a simple dish you can never get over with. There are multiple variations in southeast Asian cuisine like pineapple rice, kimchi fried rice. Easy to cook and fast too. Simple wok and loads of fresh produce is a perfect choice when you want something tasty. This healthy rice bowl is an easy weeknight meal. Another good variation is Chinese broccoli fried rice along with turmeric. This turmeric fried rice is easy to make even with leftover rice.

    Easy way to feed your kids vegetables without much hassle. What else can you ask for. If you do not have time for veg Manchurian, pair it with dal fry. It might look like an odd combination, but it just works! You can also have it with some easy minestrone soup for cold wintry nights. Plenty of health benefits too ! More vitamins, carbs too !

    Benefits of broccoli

    • Broccoli is a cruciferous vegetable and is rich in calcium.
    • Good for fiber.
    • Helps fight cancer.
    • Reduces inflammation.
    • Promotes digestion.

    Equipment

    • large wok / deep sauce pan / large frying pan
    • sieve
    • food processor optional

    Ingredients

    • Cooked rice / left over rice (Boil white rice(with quinoa if you like) with double the water and strain it once its cooked.)
    • extra-virgin olive oil / sesame oil
    • Salt as per taste.

    • Garlic chives or garlic cloves
    • Broccoli florets
    • Turmeric powder / curry powder

    Instructions

    • Heat oil in a wok on a medium/high flame & add broccoli to it.

    • Cover and cook for few minutes

    • Take off the lid once the broccoli is cooked. I like to keep it crunchy so do not cook it completely.

    • Now add cooked rice with garlic chives, turmeric powder and salt.

    • Mix the ingredients in the wok, turn off the heat after few minutes. Top tip: If wok is not hot enough it will result in clumpy rice as vegetables will get soggy.

    Variation

    • You can also add spring onions instead of garlic chives. You may use garlic cloves instead of garlic chives. Another variation is broccoli fried rice Indian style or broccoli pulao where you can use garam masala to flavor basmati rice. Add other whole spices like mace, black pepper and green pepper, cloves, bay leaves in tempering.
    • You can make other variations like turmeric rice with vegetables (add more veggies like carrots, corn, bell pepper, onions, peas, cauliflower, potatoes)
    • You may also add left over firm tofu to make turmeric tofu fried rice. Alternatively vegetarians can add cottage cheese or you may choose to make turmeric egg fried rice. Non-vegetarians can also make turmeric chicken fried rice.

    Storage

    • This vegetable fried rice stays well for 1-2 days in refrigerator. However, you must always heat chilled rice to avoid food poisoning before consuming leftovers. You can also freeze this recipe. Just microwave cold rice before you eat.
    • You can always chop veggies and keep them separate in an air tight box. Make the rice and add them instantly or add it to left over rice in a wok for an instant pilaf.

    Substitutions

    • You can use different types of rice to make this rice dish. It tastes well even with brown rice or jasmine rice. Another variation is adding some quinoa to your rice while cooking white rice. This helps improve protein content too.
    • You can also add chopped green beans, green onion, carrots and corn kernels to make broccoli pulao. You may use frozen veggies to make this recipe. Add some fresh ginger and fresh herbs as per your choice. You can also add some plant-based proteins like vegan fillets to this recipe.
    • It is also a great way to use last night’s leftovers. Another variation is turmeric chicken fried rice where roasted chicken drumsticks are added to this recipe. Non vegans can also top it with a fried egg.

    FAQ

    Is Basmati rice good for fried rice?

    Any long grain rice like basmati or jasmine is good for fried rice. Shorter grain rice has more water content so you need to avoid it. They tend to get sticky post cooking.

    What oil should I use for fried rice?

    Any vegetable oil like peanut or sunflower is good.

    How do you keep rice from clumping?

    Wash your rice well before you cook. Best to strain the cooked rice in sieve by running it under cold water. This will help remove starch, if you want to avoid rice clumps.

    Why is Thai fried rice different?

    Thai fried rice uses jasmine rice, while Chinese recipes use long grain white rice. Traditional Thai fried rice is made without soy sauce, which is used in Chinese cuisine. It usually features other flavorful sauces like fish sauce and oyster sauce. Japanese Japanese fried rice is made with short-grain rice, such as sushi rice, which has a chewy texture.Mepssal, or sushi rice, uncooked short grain rice, is the kind of rice Koreans use for fried rice.

    • 2 tablespoon oil sesame oil or any vegetable oil
    • 2 cup Broccoli florets
    • ½ cup garlic chives chopped,else use garlic cloves (2-3)if you like.
    • ½ teaspoon turmeric powder
    • salt as per taste

    Instructions

    • Heat oil in a wok on a medium/high flame & add brocolli to it.
    • Cover and cook for few minutes (3-4 minutes)
    • Take off the lid once the broccoli is cooked. I like to keep it crunchy so do not cook it completely.
    • Now add cooked rice with garlic chives, ground turmeric powder and salt.
    • Give it a stir and let it cook for few minutes(4-5 minutes.Turn off the heat
    • Serve this vegetarian broccoli fried rice warm with some tomato soup.

    Food safety

    • Never leave cooking food unattended.
    • Always reheat left over food.
    • If it tastes rancid or smells different, discard.
    • Keep the kitchen ventilated when cooking at high temperature.
