Chilli cheese toast sandwich recipe is a great snack.It is a wonderful recipe which reminds me of my childhood. Good old days when we were kids.Those days, during our wonder years, oven was not common. We would see patties, khari toast, veg puffs and cheesy toast at our local bakeries.
Wonder when we could have those or if we were lucky, a slice of chocolate cake(I still wonder why it was called as a pastry).It was a mini bread pizza when we didn't know what a pizza was & that chilli and peppers also stood for capsicums!
Kids today are so aware of global cuisine be it bagels or pizzas, hakka noodles or tofu nuggets. Sometimes I envy their knowledge at this age. This is a protein packed recipe.I t is a great way of feeding picky kids veggies.Grate some cheese on top and make them finish it.

Ingredients
- bread
- corn
- peppers
- oil
- cheese
- onions
- salt and pepper as per taste
- oregano/thyme
Instructions
- Mix peppers,onions,corn kernels in a bowl.
- Place the bread on a baking sheet/tray. Use an oil spray on the bread or brush the bread with 1 tablespoon oil.
- Place the mixed veggies on the bread ,add cheese on top.
- Preheat the oven for 5-10 mins at 160 deg C.Place the bread slices in the oven.
- Bake for 15 mins until sides are roasted and cheese melts.
Storage
You can freeze this in a tray with some cling foil on top. Preheat your oven and bake it whenever you wish to serve.
Substitution
You can also make cheese toast on a pan or in an air fryer.
Variations
You can even sneak in some chopped baby spinach if you have a picky kid.No one can refuse a hot cheesy cheese toast. Finely chopped broccoli and leeks also are a great option. You may add chilli flakes if you like it extra spicy.
